Baby Corn Pulav/Pulao Recipe:

Hi All!Sorry for the long break. Unfortunately, my internet connection was on problems continually. Coming to this recipe of Baby Corn Pulav/Pulao… I like baby corn and corn in any form. It had been pretty long since we had pulao/fried rice as it was continual flooding of traditional dishes at home. Hence gave a random try on last Sunday with baby corn. why don’t you also try and let me know the outcome. It can be done in a jiffy. 🙂

Baby Corn Pulav/Pulao Recipe:

Ingredients:

  • Babycorn-4 or 5
  • Basmati Rice-1 Cup
  • Onion-half(chopped lengthwise)
  • Capsicum-1/4(Chopped lengthwise)
  • Ginger-A small piece
  • Garlic-5 to 7
  • Green Chilly-1
  • Pepper powder-1/4 tsp
  • Chilly powder-1/4 tsp
  • Mint leaves-7
  • Cardamom-1
  • Cinnamom-A small piece
  • Clove-3
  • Ghee-To cook
  • Salt-To taste

Procedure:

1.Rinse and soak basmati rice in water for 20 minutes.

2.Pressure cook the rice for 3 whistles with 1 cup of water.

3.When the pressure is released,spread the rice in a plate and fluff it up with a fork.

4.Wash baby corn and cut into thin slices.

5.Par boil the cut corn and set it aside.

6.Add ghee in a pan and the paste of garlic,ginger and chilly.

7.When the raw smell of the paste disappears,temper with cinnamon,cardamom and cloves.

8.When the raw smell vanishes add chopped onion and saute till golden brown.

9.Add capsicum and fry it till becomes crispy.

10.Now sprinkle salt,pepper powder,chilly powder and give a quick stir.

11.Add baby corn ,mint leaves and mix well. Switch off the gas after a quick mix.

12.Let the mix to cool.

13.Add the rice cooked with the mix and serve it hot with any raitha/manchurian.

P.S:

Usage of capsicum is completely optional .

Adding mint leaves gives an excellent taste and lingering flavour.

Adjust chilly powder,chilly and pepper powder quantity based on your spice level.

Use a fork to mix rice in last step.

Do not keep blending for more time as it would spoil the texture of the rice.

Baby corn can be given to babies above 1 year.
