KAMBU GODHUMAI IDIYAPPAM/PEARL MILLET WHEAT STRING HOPPERS

Kambu Idiyappam:

String Hoppers/Idiyappam is an Indian version of noodles,to be precise south-Indian version of noodles.My boy loves it and he calls it as noodles and can have it even without side dish. This is one of the best breakfast foods I would say because it is steamed.It is an excellent choice for all ages from 6 months to 60 years.Mom makes it in the traditional way using the big uruli.You can find that process here . It gives you the perfect ,very soft string hoppers. Here is an instant method too for this generation. It is comparatively easy and definitely tasty too.You can pair it with plain milk/coconut milk/ghee+coconut/sothi/kadala curry/veg.kurma or any thick gravies.Mom makes a variety of sevai like lemon sevai,tomato sevai etc.So the variations you can give to this simple dish is endless.I attempted making the same with all millet flour and one such recipe is what I am presenting to you today. Kambu idiyappam Recipe:

Ingredients:

This serves 4-5 persons

  • Bajra/Pearl Millet/Kambu Flour-1 cup
  • Wheat Flour-1/2 cup
  • Rice Flour-1 cup
  • Salt-To taste
  • Water-To cook(Approx 2.5 cups to 3 cups)

Procedure:

1.Measure the ingredients and keep things ready.

2.In a wide bowl add all three flours ,salt and mix together.

3.In the meantime heat water.

4.When water begins to boil ,remove from the gas and add water to the flour gradually.

5.Keep mixing as you add water.

6.Try kneading it with a spoon to a rough dough.When it slightly cools use your palms and knead into a smooth and soft dough.

7.Add the dough to a idiyappam press and make idiyappam.

8.Steam cook them in a steamer or idly maker for 10-15 minutes.

9.Serve it warm with kadala curry

Notes:

You can replace bajra flour with any millet flour.

Adding rice flour is optional.Since this was my first try I was scared to go only with millet flour that too pearl millet flour.

You can skip wheat.I added because little one was so demanding on that day.

Do not cook it for more than 10-15 minutes.

Serve it warm.

Avoid salt for babies less than one year.

Babies above 6 months can be given with less spices after having ruled out allergies of individual ingredients.
