Ragi Rajgira Cookies
Yeppieee!!!I finally tried baking cookies for the first time and it ended up so successfully. And you know what makes it even wonderful? It is white sugar-free/gluten free/raising agents free -Sounds extremely nutritious right? It is made of finger millet+Amaranth flour as main ingredients. This is my first attempt at baking cookies/biscuits at home and it turned out super yummy and a great hit.

It is toddler approved and in less than 24 hours more a tray is empty. My little one loved it so much. I was really thinking of various options and recipes to use this flour. I tried adding to dosa/fritters batter. It came out well. But it took me around 2 months to try a baked goodie recipe. I didn’t have enough confidence to give it a try because baking a cookie/baking without raising agents/baking with rajgira flour etc and a lot more was new to me. I am so happy that my maiden attempt turned out super healthy and yummy. Before getting into the recipe let’s look upon some facts about amaranth /rajgira.

What is Rajgira flour/Amaranth Flour?
The flour is basically from the seeds of amaranth plant(thandu keerai/mullai keerai in Tamil). This is a seed and not a grain like other millets. They pop up the seeds and use in cooking/consumed as such /roasted and ground as flour. The amaranth plant is called Chaulai in Hindi and the seeds are named as Rajgira | Ramdana in Hindi and Marathi, Rajgaro in Gujarati, Mulai Keerai /Thandu Keerai in Tamil and seeds are called Keerai Vithai, Thotakura Ginjalu, Cheera in Malayalam and Harive in Kannada (plant name). It is actually a pseudo-grain to be very precise. It can be either red or white in colour. The flour is usually slightly ivory in colour or reddish(if seeds are red)

How can I use them?
You can either choose to buy the roasted flour as such or use the seeds to grind the flour.
You can cook it as a cereal, pop like corn(popcorns), grind into flour and use it.
When can I offer Amaranth flour/seeds to my baby?
As early as 180 days plus/six months plus.
It is extremely rich in protein and calcium making it the best protein plant source. It has all essential amino acids and Vitamin B2, B6, B9 and minerals like iron, magnesium, phosphorus, zinc, selenium, sodium and copper

After knowing all of these I really wanted to try my hands on this miracle flour with some innovative recipe. Usually people include them in making porridges/kheer/energy bars/soups/stews.I somehow wanted to use it in an unusual way.I made bajji/fritters with this and it was amazing.(Recipe coming soon). And yesterday I tried these cookies/biscuits.I wanted it to perfectly healthy and hence ensured to skip even baking powder/baking soda which are the standard ingredients in baking.Come let’s check out the recipe of Ragi Rajgira Cookies
Ingredients for Ragi Rajgira Cookies:
- Ragi Flour-1/2 cup
- Rajgira Flour-1/2 cup
- Cane Sugar-1/2 cup
- Butter-1/4 cup
- Cinnamon Powder-1 tsp
- Tutti Fruti-2 tbsp(Optional)
- Butter-1/4 cup
- Honey-2 tbsp(Use as needed)
- Flax seed Gel-Flax Seed Powder-1 tbsp+Water-3 tbsp(Luke warm)
1.Measure all ingredients and keep them ready.
2.In a pan dry roast ragi and rajgira flour(If your flours are not roasted).
- Sieve them after cooling along with cinnamon powder and set them aside. (I skipped this as mine was homemade sprouted ragi flour and organic rajgira flour)
4.In a mixing bowl add butter and mix it with cane sugar.
5.When they are mixed well blend them with flax seed gel.
6.N ow add the flour and knead them to a dough.Y ou can add honey to make the dough to the right consistency.
7.Wrap the dough in a cling wrap and refrigerate for an hour.
8.In the mean time pre heat the oven/OTG for 10 minutes at 170 degrees C.
9.Grease the tray and place the butter paper on it.
10.After refrigeration flatten the dough to 1 cm thickness and use cookie cutters to make required shaped.
11.Carefully place them on the tray and bake at 170 degrees C for 10-15 minutes.
12.Cool them well and before you munch the crunchy healthy cookies.
13.Store them in an airtight container and use for a week.
You can use an egg/apple sauce/chia seeds soaked instead of the flax seed gel.
The cookies might get burnt so keep a constant check after 9 minutes.
They will be soft on taking out.Once they cool down they will turn crispy.
You can use refined sugar/powdered jaggery/palm sugar instead of cane sugar.
You can skip honey and add some warm water or milk to reach the dough thickness.(Similar to roti dough but not
