This is an recent attempt of me after longing for a spicy lunch on a lazy Saturday. I heard about this Masala Rice of Maharastra and gave a random try. It came out excellent and all of us wanted more. The best part of the recipe is it can be made in a jiffy in a single pan.You know I hate cooking in the kitchen for long hours. I finish as soon as possible and wrap up. Here is my collection of 30 + lunch box recipes for you.I have consolidated them and made a separate post on my FB page. Please find them in the below link.

Ingredients for Masala Rice:
- Basmati Rice-1 cup
- Vegetables-1 cup(Carrot ,Beans,Peas,Potato)
- Onion-1 (sliced)
- Capsicum-3 tbsp(chopped finely)
- Cinnamon-A small piece
- Bay Leaf-1
- Garam Masala Powder-1 tsp
- Chilly Powder-1/2 tsp
- Coriander Powder-1/2 tsp
- Turmeric Powder-A pinch
- Oil-To cook
- Salt-To taste
- Water-2 cups
1.Measure and keep all ingredients for Masala Rice ready.
2.Soak the rice in warm water for 30 minutes after rinsing well.
3.In a pressure cooker,add oil and add bay leaf,cardamom,cinnamon and clove.
4.When they crackle,add onions and saute them.
5.Now add the veggies except capsicum and give a toss.Don’t saute.
6.Add the masala powders,salt,soaked rice(after draining water) and mix well.
7.Top with the capsicum and add water,mix well.
8.Cook for a whistle.
9.When the pressure is released flip it with a fork and garnish with coriander leaves.
10.Serve Masala Rice hot with any chips or fries or fryums.
You can tweak the combination and quantity of spice powders used as per your taste.
You can add tossed capsicum and tomato at the end instead of pressure cooking.
You can add veggies of your choice.
For babies below one year skip salt and add spices accordingly.
