Corn Pulao Recipe/Sweet Corn Pulav Recipe-Corn has been my big time favourite since childhood.Only in the recent days, we come across the American sweet corn which is so fluffy, big and easy to cook.During childhood, we get corn(Makka Cholam) and all that we would do is pressure cook for a long time and eat after sprinkling salt or toast it in open fire and have it.In North India, the sight of cooking corn in open fire is very common.It is one super filling and yummy food.I would suggest you use the local corn kernels if you often cook corn instead of using American Sweet Corn.The below Corn Pulao Recipe was one of my earliest trials(June 2015).I couldn’t upload because I didn’t click a decent final picture.The below images might vary because of this.Come let’s check out Corn Pulao Recipe.
Corn Pulao Recipe:
- Corn Kernels-1/2 cup
- Basmati Rice-1 cup
- Coconut Milk-1 cup
- Butter/Ghee-To cook
- Onion-1 sliced
- Salt-To taste
- Turmeric Powder-A pinch
To grind into a paste:
- Onion-1/2 small
- Tomato-1 small
- Ginger-Small Piece
- Green Chilly-1
- Star Anise-1
- Cinnamon-A small Piece
1.Measure and keep all ingredients ready.
2.Wash and soak basmati rice for 30 minutes.If you are using the native corn, soak them too.American sweet corn will not need soaking.
3.Grind the items mentioned under “to grind into a paste” and keep it aside.
4.In a pan add ghee and add the tempering elements.
5.Now add the chopped onions, capsicum, corn and toss them.
6.In a pressure cooker, add butter and add the ground paste and saute till the raw smell vanishes.
7.To this, add the corn mixture which we have sautéed and soaked rice(after draining excess water).
8.Mix everything together in low flame along with salt and coconut milk.
9.Pressure cook for one whistle.
10.After the pressure is released, fluff with a fork carefully.
11.Corn Pulao is ready to serve with any fry or gravy or raitha of your choice.
You can make it in a single pressure cooker too. There is no need for a separate pan to saute the corn and onions.I just gave it a try.
Adjust spices as per your taste.
Skip salt for babies below one year.
