Coconut milk pulao recipe:

Coconut and coconut milk is one among the most common ingredients in most of my recipes. Little One has started taking lunch to school and from now on I will have to think more options.




Coconut milk pulao recipe:

Ingredients: Serves 3

  • Basmati Rice-1.5 cups
  • Coconut milk-2 1/4 cups
  • Onion-2 (sliced)
  • Ghee to cook
  • Salt-To taste
  • Cashews & Raisin -Handful
  • Ginger garlic green chilly paste-1 tbsp

To temper:

  • Cloves-2
  • Cardamom-2
  • Bay Leaf-1
  • Cinnamon-A small stick
  • Star Anise-1

Coconut milk pulao recipe




Procedure:

1. Measure the ingredients and keep them ready.

2. Wash and soak basmati rice for 30 minutes.

3. In a pressure cooker, add ghee and saute cashews, raisins and onion till they golden brown.

4. Keep them aside.

5. Temper and add GGG paste and then the rice.

6. Fry them well and add coconut milk and salt.

7. Stir well and pressure cook for 2 whistles in medium flame.

8. When the pressure is released gently fluff with a fork and then add the onions and dry fruits.

9. Serve the coconut milk pulao with any fry or raitha or kurma of your choice.

P.S:

You can adjust the spices as per your taste.

To speed up this, you can soak basmati rice in warm water for 10 minutes.

Babies above 6 months can be given this without salt and reduced spices.
