A sweet recipe with a healthy twist-Wondering what is the occasion? This is the 400 th post on my blog(Most importantly adhering to the purpose of the blog). KitchenKathukutty attempts to provide you healthy recipes of vegetarian delicacies without the usage of white sugar, refined flour, processed/refined ingredients. By the great grace of God and support of people, I have been able to stick to the purpose of this blog and have travelled so far. I am so happy and grateful for this journey and milestone. The emotions and feelings are beyond words. This is not a huge achievement but a small reason to celebrate. Now, Let’s get into today’s recipe.

Kasi Halwa Recipe With Jaggery|Ashgourd Halwa with Jaggery:

Kasi Halwa or Ashgourd Halwa is made with white pumpkin/ash gourd/vellai poosani. It is a very common sweet served in wedding parties in Tamilnadu and the famous Agra Peta is a detailed version of this. I tried recreating the recipe without using white sugar, hence making it healthy.

Ingredients:

  • Ashgourd-2 cups (grated)
  • Jaggery-1 cup(Powdered)
  • Ghee-2 tbsp
  • Cashews-To garnish
  • Cardamom Powder-A pinch

Procedure:

1. Measure all ingredients and keep them ready.

2. Wash & peel the skin of ash gourd.

3. Grate it and keep it aside.

4. In a wide bottomed pan, add a tbsp of ghee and fry the cashews and set them aside.

5. In the same pan, add the remaining ghee and add the grated ash gourd.

6. Saute it in medium flame.

7. When the water content evaporates add the grated jaggery.

8. Mix it and keep cooking in low flame.

9. The jaggery will melt and get blended.

10. Keep stirring occasionally till the ghee separates out.

11. Remove from flame and garnish with cashews.

12. Ashgourd Halwa/Kasi Halwa is ready to serve.

P.S:

Please don’t add the jaggery before the ash gourd water content evaporates.

If your jaggery has impurities dissolve in 1/4 cup of water and then filter. Add after filtering.

Don’t cook in high flame after adding jaggery. It will thicken.

Warm serving is suggested.

The ghee added in the picture is just for photography.

Choose a tender ash gourd.

This can be offered to babies above 1 year.
