Happy Valentine’s day folks! With no next word let’s proceed to today’s recipe. It is a super Valentine special cake from Kalaimathi Rajesh of Mathi’s Kitchen. And you know what has she baked for us? It is Joan’s rainbow cake(Scroll down to know more about Joan’s cake) without eggs, refined sugar & refined flour. How sweet !! If you are a beginner in healthy baking please read this guide.

Joan’s Rainbow Cake Recipe:

In all the social media platforms, I had written a message saying “Happy Galentine’s Day” instead of V. It signifies the love for women who support/love/build up fellow women or celebration of female friendships. And this recipe curator is an awesome example for it. I will tell you why. From the day I completed 100 th post I have been invited friends/fellow bloggers to share a guest post.

I had dropped a request to Kalaimathi Rajesh too regarding the same. But due to some reason or the other, it kept delaying. Last week she said she would share the guest post for my 4 th blog anniversary. And to my biggest surprise, she had made “Joan’s Rainbow Cake”.It is not definitely easy/simple. She explained she wanted to give me the best & the most special as the delay was too much and she had kept me waiting for a long duration of time. How lovely! There are no words to explain the lovely nature & hard work of sweethearts like her.

Kalai Rajesh, you are definitely a Galentine. She needn’t have put so much hard work & efforts for me. But she ensured she gave her best, just for me. Trust me I just am an acquaintance to her in the virtual world. She had done these and sent across a very clear recipe and pictures despite her busy schedule. So far I have been impressed with your awesome bakes & recipes. But today your super nature swept me off the floor. There are no words to appreciate your kind nature Kalai. Joan’s Rainbow Cake Recipe:

Ingredients for pista cake :

· 1/2 cup pistachios

· 3/4 cup wheat flour

· 2 tbsp corn flour

· 1 tsp baking powder

· 1 tsp cardamon powder

· 1/8 tsp grated nutmeg

· 1/4 cup oil

· 6 tbsp brown sugar

· 1/2 cup curd

· 1/4 cup milk

Instructions

1. Pre-heat your oven to 180C. Prepare a tray and line it with parchment paper

2. In a mixer finely powder the pistachios.

3. Sift the flour, baking powder, cardamom powder, and nutmeg powder.

4. In a large bowl, beat sugar and oil until the sugar dissolves. Add in curd, powdered pista and mix well.

4. Combine dry ingredients to the wet ingredients in batches, alternating along with the milk. Do not over mix. Mix only until well combined.

5. Pour the batter in pans and bake for 25 minutes or until a toothpick inserted into the centre comes out clean. cool down the cake completely before frosting.

Ingredients for orange cake

  • Wheat flour – 3/4 th cup
  • Corn flour – 1/2 tbsp
  • Baking powder – 1/2 tsp
  • Baking soda – 1/4 tsp
  • Pinch of salt
  • Brown Sugar – 6 tbsp.
  • Orange marmalade 1/4 cup
  • Flavourless cooking oil – 1/4 cup
  • Curd – 1 1/2 tbsp

INSTRUCTIONS:

· Preheat the oven @ 170 degrees C. Kindly adjust the temperature and timer settings as per your oven. Grease 8” pan and dust it with flour.

· Sieve wheat flour, corn flour, baking powder, baking soda and salt 3 to 4 times from a little height.

· Mix sugar, orange marmalade with a balloon whisk or hand mixer for 2 minutes, now add curd, oil, and mix to form an even mixture.

· Stir in the flour mixture in 3 to 4 batches do not over mix.

· Pour the batter into the prepared cake pan and bake it for 25 to28 minutes / until golden brown/ skewer stick inserted in the centre comes out clean.

· Cool completely before frosting.


Ingredients for strawberry cake

  • Wheat flour – 3/4 cup
  • Brown sugar – 1/2 cup
  • Oil – 1/4 cup
  • Curd – 1/4 cup
  • Baking Powder – 1/2 tsp
  • Baking Soda – 1/4 tsp
  • Salt a pinch
  • Strawberries – 1/2 cup pureed

Method:

Grease an 8 ” pan with oil and dust with flour or use parchment paper Set aside. Preheat oven to 180 degrees C.

Take flour, baking soda, baking powder and salt in a bowl and mix well. Set aside.

Take strawberries in a blender and puree till smooth. Set aside.

Take sugar, oil, yoghurt in a bowl and mix well till creamy.

Add in strawberry puree and mix well.

Add the flour mix and fold gently. Spoon this into the cake pan and bake for 20 to 25 mins.

Remove from oven and cool completely before frosting.

Cool all three cakes completely, refrigerate for a few hours  before frosting

On a cake, board keep all three cake one above the other, by filling the cream in between.

Crum coat the cake and pour chocolate ganache on top

Whipping Cream Recipe:

Ingredients:

200 ml of Amul fresh cream
2 tbsp – powdered brown sugar (optional)
Method:
1. Put the cream in the refrigerator for at least 3 hours, only when the cream is chill it whips well.
2. Chill out the bowl s and the whipping beaters too.
3. Fill a large bowl with ice cubes.
4. When ready to ship take out everything from the fridge.
5. Take out the thick cream from the packet and put it in the small bowl n whip it on medium speed for almost 10 min.
6. Add sugar in-between the process.
7. In a few minutes, you get whipped fresh cream.
8. Fill the cream in between the layers then crumb coat it covering the sides.
9. Put it inside the fridge till it sets, (when you touch the cream it should not be sticky, it must be firm.)
10. Once set pour the ganache on top and make beautiful dripping.

Chocolate Ganache Recipe

Ingredients:

  • 50 ml Fresh cream
  • 100 grams Dark chocolate, finely chopped

Procedure

  1. To begin making the Chocolate Ganache Recipe, first, place the cream in a saucepan over medium heat and bring to boil.
  2. Remove from heat and add it to chopped dark chocolate.
  3. Mix it well till all the chocolates are coated with the hot cream.
  4. Close and leave for 3 min
  5. Now mix well till you get smooth silky ganache without lumps.
  6. If you find any lumps, melt it using the double boiler method.
  7. Use it as it is for glazing.
  8. Spread the Chocolate Ganache over cooled cakes and spread till sides to get the dripping.

Joan’s Rainbow Cake :

There is a Tamil movie called “Un samayal arayil ” which is the remake of a Malayalam movie called “salt n pepper” – a food-based movie. In that movie hero and heroine start falling in love for each other without meeting, At that point of time in a scene, the hero gives the recipe for “Joan’s rainbow cake” for her lover and they start making it from their different homes at the same time , this makes them more closer. The story is all about,a French women Joan, so madly, truly and deeply in love with a soldier who was fighting for the Second World War (1939-1945).

The soldier informed Joan about his arrival, so to surprise her love on the day of his arrival, she baked a delicious strawberry cake and awaited for him, but he never turned up. Little disappointed, on the next day Joan baked a pista cake, anticipating her love would return at least today, but the soldier did not return. Still, Joan did not give up, she joined the two cakes with cream and continued to wait.

On the third day she baked an orange cake and was excited that any moment her loving soldier would return, but he did not return the whole of the third day. Joan was extremely disappointed and went to bed that night with a heavy heart. The next morning the soldier was at Joan’s door with a bunch of chocolates to surprise her. Joan then joined all the three cakes, melted the chocolates the soldier had got, poured it over the cake and they both ate it happily, celebrating their never-ending love
