KudamPuli Charu|Malabar Tamarind or Kokum Extract:

Kudampuli or Kodampuli is Garcinia indica also commonly called as “Kokum or Malabar Tamarind”.Kudampuli is an essential part of Kerala, Maharastra & Goa cuisines. I was introduced to this in 2012 when I began cooking. This was suggested as a replacement for our normal tamarind by Dr.Selva Shanmugam. A mention of this has been made already here

KudamPuli Charu|Malabar Tamarind or Kokum Extract:

Let me share the procedure of making it and then explain the usage & health benefits. The replacement has not been made 100%. But I have tried using this instead of normal tamarind in all recipes. The rasam which I will be sharing next was the tastiest recipe.

KudamPuli Charu|Malabar Tamarind or Kokum Extract:

Ingredients:

  • Kudampuli/Kokum-Lemon Sized
  • Water-2 to 3 cups

KudamPuli Charu|Malabar Tamarind or Kokum Extract

Procedure:

1. Soak the kokum/kudam puli in 1.5 cups of water for 40 minutes, preferably in hot water.

2. The kudampuli would have turned soft.

3. Now add this to a pan and boil it for 10 minutes.

4. Set it aside and cool it down.

5. Extract the liquid by mashing the kokum.

6. Repeat the same for one more time.

7. Gather all the liquid extracted and boil until it reduces to half.

8. Cool down and store under refrigeration.

9. KudamPuli Charu|Malabar Tamarind or Kokum Extract is ready.

P.S:

This can be stored for a month under refrigeration.

You can stop with only time extraction too.

Please don’t store when it is warm.

Cool the extract completely before storing.

Pregnant women are advised to take up a Siddha/Ayurveda Doctor’s recommendation before using this.

KudamPuli Charu|Malabar Tamarind or Kokum Extract Benefits:

Kokum is a plant from the mangosteen family is a very common plant in the Western Ghats region. Kudampuli Charu can be used in all places where we use tamarind extract. This is known for its anti-colic properties and helps in digestion. An excellent cure for rheumatoid arthritis and helps in lowering bad cholesterol. The Kokum has a nature to regulate metabolism and regulates blood sugar levels. Regular usage of kokum in meals will improve your digestion. It is said to have anti-carcinogenic properties and anti-ulcer properties too. The juice, when consumed regularly, is said to aid weight loss.

Kokum Extract can be used in gravies, curries, rasam and also to make juices. I initially found it so hard to use it because the raw form which you buy from the shops will be hard. Later my mother in law suggested this and the usage has now become extremely easy.
