Nendran Chips Recipe:

Nendran Chips recipe is from my husband and he is the one who is a master in making the perfect crispy non-oily banana wafers. It has been a year since I clicked this and here I am posting it with Onam approaching. The pure smell and flavour of coconut oil with these chips is heavenly and you will be tempted to try them when to travel to Kerala and Tirunelveli/Courtallam. Mom makes all variety of chips at just a breeze with the wooden traditional cutter.

Nendran Chips are crispy thin wafers made with raw Kerala banana in coconut oil. After making all the savouries for Krishna Jayanthi, I made some Ethakka Upperi and the bowl is all empty now. The chip is an integral part of Kerala Feast Meal(Onam Sadhya). From our childhood days, we love them and have relished the different variants from Nagercoil, Tenkasi and Kerala.

Ingredients:

  • Raw Banana(nendran/Kerala banana)-2
  • Coconut Oil-To Fry
  • Salt-To taste
  • Turmeric Powder-A pinch

Procedure:

1. Wash the banana and peel the skin carefully.

2. In a wide bowl of water add some salt and turmeric powder. This step adds taste and also prevents blackening.

3. Add the peeled banana to this water.

4. Keep them immersed for 20 to 30 minutes.

5. Take it out and dry it.

6.In the meantime heat oil.

7. When the oil is hot, carefully slice them and add to the oil.

8. Fry them in medium flame on both sides.

9. Nendran Chips are ready. Drain excess oil and store in an airtight container after cooling.

P.S:

The banana should be raw.

You can drizzle some salt and chilly powder after frying.

The secret behind crispy chips is to slice them very thin and fry them in hot oil until the shhh sound goes.

Don’t store when the chips are hot.

Be very cautious while you directly slice to oil.

You can slice them, dry them on a kitchen towel and then add it the oil instead of directly slicing into the hot oil.

The slices/the banana should not have even a drop of water. So dry them well.

Storing it in an airtight container with a tissue will keep it fresh and crispy for a week.
