Vadu Manga Urugai Recipe| Maavadu Pickle Recipe with detailed recipe and step by step images. If there is a pickle variant I love so much then it is vadu manga. Vadu Manga is nothing baby raw mangoes. My periamma used to make for all of us in the family and will send to all families every summer. Last year when we were at a farmhouse we found some baby mangoes and I made this. By the time I clicked the baby mangoes season of last year got over. Hence posting the recipe now.

The availability of vadu manga in the markets denotes the beginning of summer and the heavenly combo of vadu manga with curd rice is just out of the world. I have only posted tomato pickle on my blog in pickles category as I am not a fan of pickles.

Ingredients:

  • Maavadu-2 cups
  • Sesame Oil-2 tbsp
  • Red chilly -20
  • Salt-As per taste
  • Fenugreek-4
  • Mustard Seeds-1/4 tsp
  • Turmeric Powder-1/2 tsp

Procedure:

1. Remove the Stem of the baby mangoes and wash them well in water.

maa vadu 2. Pat dry well on a towel and add the vadu manga in a wide bowl and sprinkle some oil and mix well.

3. Dry roast salt separately and powder finely. Dry roast chillies separately and powder them.

4. Dry roast fenugreek and mustard and powder them. Now add the powdered salt, turmeric powder, fenugreek+mustard powder and mix well.

5. Now add this to a sterilised glass bottle and leave it for a week. Ensure to mix it well every alternate day.

6. In a week you would find the baby mangoes slightly shrinking and watery+oily content on top of the bottle. Now add the chilly powder and remaining oil.

maa vadu7. Every day, mix them well. Continue this for a week. Shaking the bottle would do instead of using a spoon to mix.

8. Yummy pickle is ready. Store in a clean glass jar or Jaadi.


Always use a clean spoon.

This stays good even for a year if stored and used properly.

Ensure to have completely sterilised the container, including the lid
