Carrot Kosambari Recipe:

Carrot Kosambari Recipe is one of my favourite salad recipes. My mom used to pack this for lunch during school days and I have been loving it since then. You just need some 10 minutes to make this and a super healthy and yummy dish will be ready. Just like me my son also loves this carrot moong salad.

Carrot Kosambari Recipe:

There are several ways to make this salad and it is said to be from Karnataka Cuisine. Few versions have salad dressings added and some are half cooked. I love everything raw in this and especially adding raw shallots makes it extremely nutritious. Including shallots in our daily meal is something I consciously do and I personally love them. The sprouts salad and Mexican bean salad

Ingredients:

  • Carrot-3(Grated)
  • Moong dhal-1/2 cup (soaked for 2-4 hours)
  • Raw Mango-Grated-2 tbsp
  • Lemon -1/2
  • Shallots-10
  • Green chillies-2
  • Salt-To taste
  • Coriander leaves-To garnish

Carrot Kosambari Salad

Carrot Kosambari Recipe:

1. Keep all ingredients ready. Drain the water completely from moong dhal

2. In a wide bowl add everything except lemon, green chillies, coriander leaves and raw mango.

3. Mix them well.

4. Now add grated raw mango, green chillies and coriander leaves.

5. Give a stir and add lemon juice.

6. Yummy carrot moong salad is ready

You serve them fresh or allow them to rest for 20 minutes and serve.
