Eggless Banana Bread Recipe:

Hello Folks, here is no yeast eggless bread recipe as a guest post from Aishwarya of Chooboos Food Products, a good friend and a well-wisher of mine. I have been impressed with all her food posts on her page. When I approached her for a guest recipe for the blog she readily and accepted and provided me with this amazing “Eggless Banana Bread Recipe”.Kindly read the baking guide to make this without oven and also if you are a first-timer. Eggless Chocochip Banana Bread

Eggless Banana Bread Recipe

WHOLE WHEAT EGGLESS BANANA WALNUT CHOCO-CHIP BREAD (without yeast) 

The process isn’t that big as the title. Here We go

INGREDIENTS:

  • Over-ripened bananas-3 ( more ripened ones give a better taste, basically you don’t have to throw them but put them in your stomach in the form of this bread 😉 )
  • Brown sugar-1/2 cup (If your bananas aren’t sweet you can add 1tbsp extra)
  • Oil -1/2 cup(I used corn oil)
  • Vanilla extract-1 tsp
  • Curd-1/4 cup
  • Wheat flour-2 cups
  • Baking Powder-1 tsp
  • Baking Soda-1/4 stp
  • Salt-1/4 tsp
  • Cinnamon Powder-1/2 tsp
  • Chopped walnuts-2 tbsp
  • Chocolate Chips-1 tbsp (totally optional, this is just as a bribe to my LO 😉 )

Eggless Banana Bread Recipe

Procedure:

1. In a large mixing bowl, add roughly chopped bananas and sugar. Give a quick blend using a beater/whisk.

2. To the mixture, Add Oil, Curd and Vanilla extract.

3. Furthermore, In a sieve, add wheat flour, baking powder, baking soda, cinnamon powder and salt. Add this to the banana mixture.

4.Using Cut and Fold method, mix all the ingredients together. Don’t over mix- as it might turn bread chewy.

5. Add half the amount of above-mentioned chocolate chip and entire walnut. Give a mix.

6. Transfer the mixture to a well-greased bread tray and pat it well to remove the air from the mixture.

7. Add the remaining choco chips on the top to attract your kids 😉

8. In a 170-degree C preheated oven, Place this and bake for 40-45 mins, when the toothpick inserted at the centre comes out clean, consider it done!

9. Let the bread cool  and cut them into slices

10. Now your Banana walnut bread is ready 🙂

P.S:(Notes)

If you don’t have a blender/beater please mash the bananas well first.

Sieve the wheat flour as many times as you can. This will result in a less dense bread.

You can skip adding vanilla extract.

Skipping baking powder will result in reducing the softness.

Baking powder can be replaced by baking soda plus cream of tartar. But It is not recommended.(1tsp baking powder = 1/4tsp baking soda + 1/2tsp tartar)

Don’t mix the batter too much. Just Cut & Fold.

Skipping or replacing any ingredient might result in a change in texture and density.

You can use any oil or melted ghee or butter at room temperature.

Instead of brown sugar, powdered jaggery or palm sugar can be replaced.

Don’t slice before the bread is completely cooled.

The temperature and mode settings should be based on your oven.

Kindly read your manual before baking.

Check for readiness at 30 minutes with a toothpick

My bread tray was 7 inch one. You can use the same recipe to bake a cake or a muffin too. Timings will change based on the size of the tray.

Store the slices or the bread in an airtight container.

The bread stays good for 3 days in room temperature.

You can also freeze the slices and use after thawing. This will increase the shelf life.
