Kaatuyanam Arisi Dosa Recipe was our breakfast today. All I used was two major ingredients, I bet this is one of yummiest and healthiest dosa/chilla you can make. The dosa is super soft, very filling and extremely tasty. Nobody would ever say whole grains tasteless after tasting this. You don’t fill heavy too. What is Kaatuyanam Rice?

The rice variety is from TamilNadu and it is one of the traditional red rice variants. The name signifies two things – The crop grows so huge that an elephant can hide behind it and eating this rice gives your the strength of an elephant. Yaanam/Yaanai is an elephant in Tamil. The crop can grow in any climate and even in the driest conditions. It is blackish-red in colour. Naturally, this rice doesn’t need much maintenance during the growth period

It is rich calcium, magnesium and fibre, hence making it help in digestion and bone, teeth, hair growth.

With most highly polished rice, chances of obesity and diabetes are high with lifestyle disorders. Whereas this Kaatuyaanam is highly rich in calcium and not in carbohydrate.

It helps you fight against the knee, joint pains and helps in fighting arthritis.

The bran contains anthocyanins and is very rich in minerals and vitamins.

Kaatuyanam Arisi Dosa Recipe:

You can make this an adai or even a crispy dosa or soft fluffy kal dosa type. I preferred kal dosa type. The recipe doesn’t need any fermentation. I made it protein-rich too by adding lobia/thattai payaru/black eyes peas.

Makes 12 dosa

Ingredients:

  • Kaatuyanam Arisi- 1 cup
  • Raw rice-2 tbsp
  • Lobia-3/4 cup
  • Ginger-A piece
  • Red Chilly-2
  • Salt-To taste
  • Onion-2 finely chopped
  • Coriander & Curry leaves-1 tbsp (finely Chopped)

Kaatuyanam Arisi Dosa Recipe:

Procedure:

1. Wash and soak the rice and legume overnight.

2. After 8 to 12 hours, rinse well and drain the water completely.

3. Add to a mixer and grind along with ginger, salt and red chilly

4. Grind by adding a quarter to a half cup of water into to smooth batter.

5. Add the chopped onions, curry leaves and coriander leaves. Mix well with batter. This needs no fermentation.

6. Grease a dosa pan and spread the batter with a ladle. Sprinkle oil and cook both the sides.

7. Serve the kaatuyaanam thattai payaru dosa with coconut chutney.

P.S:

The recipe needs no fermentation.

You can use any type of red rice you want instead of Kaatuyaanam rice.

You can alternate black-eyed peas with green gram or ragi or moong dhal.

The flavour and texture depends on your batter consistency,

Be patient to cook both the sides of the dosa well.
