Do you love pumpkin? I love it very much. This recipe ammas classic one and we all love it. Pumpkins can be used in pumpkin halwa or pumpkin dosa and of course, kids favourite pumpkin sticks. Today’s pumpkin kootu recipe has been my quick to go recipe and a lot of readers were asking for the same

 

Pumpkin Kootu Recipe

This recipe is so simple and you can use this as a side dish to your rice or use as a curry or gravy too for roti/chappathi. You can alternate moong dhal too.

Pumpkin Kootu Recipe

  • Pumpkin-1 cup (chopped)
  • Gram dhal-1/4 cup
  • Salt-To taste
  • Green Chilly-1
  • Cumin Seeds-1/2 tsp
  • Coconut-1 tbsp(grated)

 

Pumpkin Kootu Recipe

 

Procedure:

1.Chop the pumpkin and rinse them. Soak gram dhal for 20 minutes in warm water.

2.Steam cook for 15 minutes in low flame.

  1. Pressure cook gram dhal for 2 whistles.

  1. In a mixer jar add coconut, green chilly and cumin seeds and grind without adding water. Mix pressure cooked gram dhal, steamed pumpkin and ground paste. Sprinkle salt and mix together.

Pumpkin Curry

  1. Pumpkin kootu is ready.

Notes:

Steam cooking keeps the pumpkin cooked and at the same time doesn’t let it get mushy.

You can mash the gram dhal if you wish. I like them in al dente form.

You can offer this to babies above 6 months skipping salt.
