I am first presenting you the recipe and then the details of the rice and source. This is not the red rice variant like poongar , kaatuyanam etc we have seen so far. The rice is very suitable for diabetic people and people who are obese due to the reduced glycemic index. It is great for kids as it boosts immunity. I loved the dosa and kid loved the mini idlies.

Ingredients: Makes 24-28 idlies

  • Black Rice- 2 cups
  • Whole Urad Dhal-1/2 cup
  • Aval-3 tbsp

1.Wash the rice well and soak for 4 hours. Don’t add excess water. We shouldn’t drain the water used for soaking.

2.Wash the dhal and soak for 4 hours.

3.Drain the water from dhal and grind it into a smooth batter with max 1/4 cup of water.

4.Keep the urad dhal batter aside.

5.Now grind the rice with max 1/2 cup of water. You can use the water used for soaking (It would have the colour).

6.Now mix both the batter together with salt.

7.Allow for overnight fermentation.

  1. When it is fermented well, give a good mix and make idly or dosa.

What is Karuppu Kavuni Arisi?

It is Black Kavuni Rice, the ancient Forbidden Rice. This is one of the oldest traditional native rice varieties and a variant rich in antioxidants, fibre and protein. It has a purple and black pigmentation and this denotes the presence of antioxidants in them. The rice can prevent cancer and is used as a medicine in China.

The amount of anthocyanins present in this grain is the highest when compared to any red /brown rice, quinoa or whole grains

100 g of rice has close to 8.5 g of protein which is extremely high among all rice varieties.

How to store these rice varieties?

These indigenous rice varieties don’t need fertilizers or chemicals to grow. So you have to store carefully to avoid any bugs. You can buy two or three varieties every month in minimal quantity and try. Prefer using red chillies and vasambu or bay leaves inside open packets. If you buy in large quantities please freeze them and used dried neem leaves in the container.

These rice varieties are costly. Are they worth it?

This is a very common question to me every time I post a traditional rice recipe. With the refined/processed / Genetically modified foods we have invited and open to doors to all chronic lifestyle diseases to our generation. If we would want to reverse this and live healthy as long as we live we ought to make this switch of bidding bye to unhealthy whites and embracing these forgotten traditional rice varieties. A friend said to me this, ” Kalyani I am happy to invest in these traditional rice varieties rather than spending lakhs to recover from these lifestyle diseases”. I give the same as the answer. Why do you stress repeatedly about these rice variants?

The major reason I want our generation and future generation to be healthy. The more people consume these healthy foods, the more will be the demand and we shall have them in every shop like our previous generations and with more produce, the prices shall also come down. Now the produce is so low due to very less demand.

Notes:

The idlies were soft and dosas were crispy. I made a mistake of soaking overnight and also grinding in a mixer. Soak for 4 hours and grind in grinder for perfect fluffy idlies. You can add 3 tbsp of aval soaked too for softness.

Soaking overnight will add a sticky nature. Hence the recommendation is only for 4 hours. Next time I plan to soak for only 2 hours and give a try in the grinder.

You can store the batter like the usual idly dosa batter.
