Eggless Cranberry Choco Beet cake with whole wheat flour and jaggery-This is our recipe today. As I had mentioned in my previous post of eggless red velvet cake, this is just a simple alteration to the recipe and baked as a cake with raising agents. The cranberry and choco added enhanced the taste and the cake was super fluffy, soft, porous and moist. I am sure you love it and your kids will keep asking for whole wheat beet cranberry cakes 🙂 I am a novice baker , please read through the notes completely and proceed . I hope I have explained to my level best.
Today’s recipe is Eggless Red Velvet Cupcakes or Eggless Beetroot Cup Cakes. This Red Velvet Cake/Beetroot cake has no APF/maida, no white sugar, no raising agents, no butter and trust me it was done in a jiffy. Don’t you feel tempted to give it a try? Baking is simply therapeutic and easy if you begin loving it. My love for baking with healthy ingredients can’t be explained really. I wanted to try an eggless red velvet kind of a cake with natural colouring using beetroots and some baking without raising agents(baking powder/baking soda). I didn’t have much courage to give it a try because there were too many to experiment like no white flour, no white sugar, no raising agents, no artificial colouring and lots. All of these are pretty much different from the usual recipes. And above all, we wanted to do some topping with frosting cream too. Too much na for a beginner??? I know 😉 I got some courage from my friends Kalai Rajesh, Ravneet Kaur and Gouthami(Click here for her recipe) who posted similar experimentation in the recent days. The trial session went on last weekend and it came out pretty well except for few corrections which I learnt from experts. I have included all details under my observations. Please read the recipe in detail and give it try. There was also a cranberry choco cake made with the same combinations which will be posted this week soon. Eggless Ragi Choco Chip Cake Recipe-Here comes one more random attempt with millet flour in baking without raising agents. I wanted to check the result of not using baking powder/soda in baking. My cookies were 100% successful. This cake got slightly dunked in. And I believe it is because of not using raising agents or curd. I am looking for experts to share their opinion on this. Here is the story of this bake 🙂 I ended up burning the top of my cupcakes but successfully made this cake with my little ones help. My boy is so keen about what mommy cooks for him for every meal. He urges me to plan my every meal, every snack of the week well ahead. He has his own choices and he would love to assist me in cooking especially baking. This was planned to be eggless choco chip cupcakes with ragi and flax seeds without raising agents. I accidentally altered the mode and extended the timing with no proper knowledge and burnt the top of cupcakes. So I poured the second part of the batter to a cake pan,LO did the mixing, garnishing and converted it to tutti fruity cake 🙂 He removed the burnt top of the cupcakes and stored them for this snack box for the coming week. How much should we learn from these kiddos?! I even forgot the exact measurements as this was made long back. I have given the procedure and other details for both cake and cup cake here.

How are you doing?I was away from home(Delhi) to escape from the air pollution for few days.Hence the blog was under silent mode.Winter is setting in and rains are pouring heavily in Tamilnadu. Kindly take the best care of you always. The Jingle season is on and here we have special recipe from Nandita Gupta, a passionate foodie who blogs at Foopla, who currently focuses on creative food for kids. When I approached her for a guest post for my blog she accepted it immediately and sent me yummy recipe.Thank you Nandita. Wishing you a great journey ahead. Linzer Cookies-When she mailed me the recipe I just learnt about its history. These cookies are basically an altered version of a dessert(originally a tart) made of a crust with almond flour and blackcurrant jam. Nandita has given us the simplest way of making with whole wheat flour and cane sugar as I requested her make it a wholesome suiting my blog’s purpose. Doesn’t it sound healthy and yummy?
Little one is so fond of occasional treats of cookies and cakes. He wanted me to make something with tutti fruti on seeing the new eggless cake slices from Britannia.Hence I planned to make a similar cake and found this recipe.I just tweaked it a bit as per ingredient availability and with no white ingredients.I didn’t get a small bread loaf pan and various coloured tutti fruti. So I decided make it a cake with added cashews and raisins. My next trial would be replicating the same after collecting all required ingredients. This can be offered to babies above one year. And if you would like to make this cake in a pressure cooker you can refer my recipe of pressure cooker cake here.Have you observed that 99% of my recipes will not have any of the refined/processed/junk/white devil ingredients/?Yeah!That’s the total purpose behind my blog. Vegan Mango Muffins-A muffin recipe with no white ingredients and no milk products-Yes it is vegan. I just can’t believe myself and I can’t hold the recipe to myself. It is definitely worth the try because it just takes half an hour and it is free of all whites like milk, curd, butter, white sugar, maida/wheat flour(A perfect recipe which will fit the purpose of my blogging journey-Read it in detail here). Don’t ask me if I am a VEGAN. I am certainly not. I can’t survive without butter, ghee, buttermilk, paneer, cheese.I totally avoid white/refined flours, sugar, milk, table salt and mostly curd too. I partially avoid white polished rice in our regular food and substitute with whole grains and millets. Continue reading “VEGAN MANGO MUFFINS/EGGLESS MANGO MUFFINS”→
