Kuska or Plain Biriyani has always been my favourite ever since I had it in my college canteens and during my friends’ weddings.Being a pure vegetarian this would only be the option for me to choose in a lavish non-vegetarian menu.Mom doesn’t make this as it bit too spicy than the usual level we use at home. My sister was the one who first tried a kuska recipe from here during our last vacation and from then I got glued to it.I just tweaked a bit to adjust to family’s taste and now this has become one of my standard recipes.You can make it with even plain rice or basmati or seeraga samba.Hubby loves Kuska or Plain Biriyani when made with seeraga samba. This is my 301 st post on blog.What an amazing and blessed journey it has been!Almost three years of blogging,lots of friends/well wishers/supporters/followers ,several hours of hard-work,tons of experiences ,bunch of lessons and zero monetary benefits.This blog is a brain child of beloved hubby.It all started when he was guilty of having me away from my most lovable job for umpteen reasons . He pushed me to give a start. I didn’t have a clue what this is all about.I just recorded all recipes I knew with all my knowledge on healthy eating.When I look back the images I posted initially I feel awful today but I am really happy about the learnings. Slowly I incorporated more healthy baby foods as little one was growing along and started focusing on no white cooking which had been the norm of my cooking since inception.This gradually took me to people and there are no words to describe my joy when I received notes from parents/people saying “It was you who transformed our child’s eating routine”,”Kalyani,Thanks for being an inspiration to live healthy without compromising on taste”,”I owe a lot for making my baby’s weaning smooth”.”We miss your healthy recipes”.These aren’t just words.They are real feathers on my crown which I can proudly carry and treat as a blessing.The travel was not smooth.It was a bed roses with too many thorns than petals.Lots of barriers(personal/technical/mental/physical) came along. With the love,motivation and encouragement of family,friends and supporters here I stand feeling not happy or proud or accomplished but blessed.Yes truly blessed.THANKS is the least I can say.But Millions of thanks and tons of love to each person who has been a constant source of positive energy .I bow down to God and each of you. This is an recent attempt of me after longing for a spicy lunch on a lazy Saturday. I heard about this Masala Rice of Maharastra and gave a random try. It came out excellent and all of us wanted more. The best part of the recipe is it can be made in a jiffy in a single pan.You know I hate cooking in the kitchen for long hours. Our Sundays won’t be complete without a new trial of a recipe. This week I thought of making Bisibelebath-a traditional recipe from Karnataka fused with our own sambhar sadham. I have already posted a recipe of sambhar sadham which is amma’s signature dish. I was actually thinking bisibelebath and sambhar sadham mean the same dish. But it is not so.Authentic Bisibelebath has a special spice powder and doesn’t have any vegetables added to it. So here goes my fusion recipe. I was not sure of the outcome until we had it. Sandwich is such a saviour for me.When I blink with no options to make I just blend the available ingredients to make a sandwich and my son just loves it.This was one such random try .I actually planned for a bread pizza but little one didn’t want the sauce on it,so this recipe is an open sandwich.Adding sauce(check out home made sauce recipe here) will make it an exact bread pizza. Sandwiches are excellent options for breakfast/snack/dinner because of the variations we can make and stuff all vegetables we wish to make it healthy/yummy/colourful.

Hello Friends! I am back after 75 days approx. We had a sudden transfer and I was stuck with packing/loading/shifting/unpacking/settling episodes. And finally we are kinda settled at Delhi and I thought it is high time I resume my blogging.I have been missing all of you and my blog. Hope you also had been missing Kitchen Kathukutty. I wish I could back to my routine and stick onto a regular blogging. Fingers crossed.

Now,let’s get onto today’s recipe.It is soya rice or soya bean rice or soy rice. This was made my last year for hubby’s lunch box and only now I am bringing it to this space. I tried this recipe by slightly tweaking the usual Mochai Payaru Kara Curry/Lima Bean Spicy curry recipe. This just popped up when few of my readers were inquiring about uses and benefits of soya bean. Soya bean is the richest legume with the highest protein. I have already posted a soya bean biriyani recipe which is made from fresh red soya beans(Similar to peas,butter beans).This is the dried light brown variety which is used in making soy milk.tofu etc.Please find tofu burji recipe here.You can choose to use any legume in this recipe and just make this quick and nutritious lunch box recipe.It is slightly spicy.

TOMATO/THAKKALI THOKKU & CHAPATHI DOUGH MAKING WITH LESS KNEADING(AUTOLYSIS METHOD)

Onion & tomato Thokku along with roti/chapathi/phulkha is an excellent combination and a no fail recipe in our family.This time I tried making chapathi using Autolysis Method which helps in reducing the kneading effort .I can hear you asking what it is… Here we go with the details of this.Long back, post few days of wedding when we had a family discussion during dinner and my father in law was elaborating a quick way he had learnt during his NSS camps and had asked me to give a try whenever possible as it would reduce my efforts. This is what he said to me,add half the amount of warm water to the flour(wheat) by just making deep hollow space in vessel containing wheat flour and just cover up the water with the flour just as we play with sand. Cover and let it for 30 minutes. Give a quick mix/knead and make rotis. I have always seen my in laws doing this but I have never given a thought of doing it.Recently I learnt from my school friend that this is such an easy way make chapathi/roti/phulkha and it is called “AUTOLYSIS” and I gained more confidence as I referred here.Yes…It took me almost 2.5 years to give a try and now I am always following this recipe to make roti.Believe me !The result was a perfect success. It might take you 2 or 3 trials to fix up on the right ratios as the wheat flour each of us use might differ.A few more insights about autolysis method which I read across before trying. Autolysis on a general term refers to destruction of a cell by its own enzymes or in just a word it is “self splitting”.When it comes to baking or kneading dough it means enzymes in the flour (amylase and protease)start breaking down starch and protein in the flour.Ok OK..
