Kambu Koozh/Pearl Millet Porridge is one of the traditional dishes of South India. It is a naturally fermented filling and healthy breakfast. It is a staple food for all hard working and honourable farmers. It keeps them cool and strong. I am sharing the traditional method of making the kambu koozh(Excuse the pressure cooker & mixer use). We include millets in our weekly menu at least thrice and I have tried making everything with millets from the modern cookies/cakes to the traditional koozh/soru. Chola Dosai/Jowar Dosa/Sorghum Dosa is made with the white millet cholam/sorghum/jowar. Chola Dosai is so filling, soft and gluten-free. Chola Dosai has several nutrients like phosphorus, iron, calcium, and protein. I have the habit of including millets to my routine diet in various formats. And this chola dosai recipe is how grandmom makes the chola dosai traditionally. You can also make idlies with them. Babies above 6 months can be offered with this. I couldn’t source whole millet easily here. So I kept making it with the flour.Find one more version of Chola dosai|Jowar Dosa|Sorghum Dosa here Continue reading “Chola Dosai/Sorghum Dosa/Jowar Dosa Recipe”

Ragi Rajgira Cookies
Yeppieee!!!I finally tried baking cookies for the first time and it ended up so successfully. And you know what makes it even wonderful? It is white sugar-free/gluten free/raising agents free -Sounds extremely nutritious right? It is made of finger millet+Amaranth flour as main ingredients. This is my first attempt at baking cookies/biscuits at home and it turned out super yummy and a great hit. It is toddler approved and in less than 24 hours more a tray is empty. My little one loved it so much. I was really thinking of various options and recipes to use this flour. I tried adding to dosa/fritters batter. It came out well. But it took me around 2 months to try a baked goodie recipe. I didn’t have enough confidence to give it a try because baking a cookie/baking without raising agents/baking with rajgira flour etc and a lot more was new to me. I am so happy that my maiden attempt turned out super healthy and yummy. Before getting into the recipe let’s look upon some facts about amaranth /rajgira.
