There was a short gap in my blogging owing to few health reasons and certain technical issues in running the site.I have been trying to get back to normalcy but somehow it just got postponed.It is scorching hot everywhere and Delhi touched 114 F last week. My best half was craving for the traditional Ragi Kali which is the most common food in South India and this Ragi Kali Recipe is a natural coolant. I haven’t so far tried this version of Ragi Kali. I took help of my in-laws over video call and made this. We have tasted koozh made of pearl millet and I love them so crazy. Ragi Rajgira Cookies
Yeppieee!!!I finally tried baking cookies for the first time and it ended up so successfully. And you know what makes it even wonderful?It is white sugar-free/gluten free/raising agents free -Sounds extremely nutritious right? It is made of finger millet+Amaranth flour as main ingredients. This is my first attempt at baking cookies/biscuits at home and it turned out super yummy and a great hit. It is toddler approved and in less than 24 hours more a tray is empty. My little one loved it so much. I was really thinking of various options and recipes to use this flour. I tried adding to dosa/fritters batter. It came out well. But it took me around 2 months to try a baked goodie recipe. I didn’t have enough confidence to give it a try because baking a cookie/baking without raising agents/baking with rajgira flour etc and a lot more was new to me. String Hoppers/Idiyappam is an Indian version of noodles,to be precise south-Indian version of noodles.My boy loves it and he calls it as noodles and can have it even without side dish. This is one of the best breakfast foods I would say because it is steamed.It is an excellent choice for all ages from 6 months to 60 years.Mom makes it in the traditional way using the big uruli.You can find that process here . It gives you the perfect ,very soft string hoppers. Here is an instant method too for this generation. It is comparatively easy and definitely tasty too.You can pair it with plain milk/coconut milk/ghee+coconut/sothi/kadala curry/veg.kurma or any thick gravies.Mom makes a variety of sevai like lemon sevai,tomato sevai etc.So the variations you can give to this simple dish is endless.I attempted making the same with all millet flour and one such recipe is what I am presenting to you today.
