I have been hunting for fusilli pasta quiet a long time.The look of this variety is absolutely amazing and hence the hunt.I have already attempted tomato pasta and this is another variant with added spice.
- Fusilli-1 cup
- Red chilly-2
- Ginger-1 tbsp(finely chopped)
- Onion-1 tbsp(finely chopped)
- Tomato sauce-1 tbsp
- Italian seasoning-1/2 tsp
- Cheese-To garnish(grated)
- Salt-To taste
- Olive oil-To cook
1.Boil around 1 and 1/2 cups of water and add fusilli to it.
2.Cook fusilli until becomes firm. Drain the water and set the pasta aside.
3.In the meantime,heat water in another vessel and add tomatoes to it.
4.When the skin of the tomato begins to peel remove it from water and add red chilly to the boiled water.
5.Remove the vessel from the flame once you add red chillies.
6.Once the tomatoes cool peel the skin and make a fine puree with tomatoes and red chillies.
7.In a pan add olive oil and finely saute garlic and onion till they turn golden brown.
8.Add the pureed tomato+chilly paste and saute till raw smell vanishes.
9.Add salt and tomato sauce to this and let it boil to reach a sauce consistency.
10.Add fusilli to the sauce and toss it after switching off the flame.Ensure that the entire quantity of pasta has been coated well with the sauce.
11.Sprinkle Italian seasoning and grated cheese.
12.Serve it hot.
Soaking red chillies in hot water is to ensure easy blending of tomatoes and chillies.
You can add a pinch of sugar to the puree while blending for enhanced taste.
I used cheddar cheese.You can also use mozzarella cheese.
