Red Rice Puttu|Sigappu Arisi Puttu
It is Navratri season and I hope all of you are having very colourful and delightful celebrations.Mom keeps golu(traditional show casing of dolls) and we used to have all friends and relatives visiting us.We have poojas day and night and most importantly various prasadh 🙂 This puttu recipe is one signature recipe from my mom and I have so far not succeeded in making such a perfect one. This is the favourite dish of all kids in the family including me and my son.This is generally made with white rice flour and jaggery and mom began making with red rice flour often especially after LO’s arrival. This dish is made traditionally for the puberty function by maternal aunt and served. This can be offered to babies about one year. red rice and jaggery are rich in iron and hence this is so healthy.
Ingredients for Red Rice Puttu|Sigappu Arisi Puttu:
- Red rice flour-1/2 cup
- Jaggery Powder-1/3 cup
- Water-1/4 -1/2 cup
- Ghee-2 tbsp
- Cashews- 1/2 tbsp chopped
- Coconut-1 tbsp (grated)
- Salt-A pinch
1.Keep all the ingredients ready. I had roasted red rice flour(home made) and jaggery syrup (in single string consistency) in hand.Hence the step by step pictures might not have them.
2.Roast the rice flour in low flame till aroma arises.
3.Allow it to cool and sprinkle some warm water,add salt and mix it well.
4.Now sieve this using a sieve.
5.It will be a wet powder without lumps now.
6.Spread this in a cloth and steam cook for 15 minutes.
7.While it is getting steamed,dissolve jaggery in water and make a syrup of single string consistency.
8.Once the flour is steamed ,remove it from cloth,cool it and break all lumps with your fingers.
9.In a pan heat ghee and saute cashews and coconut.
10.To this add the red rice flour(steamed) and add the jaggery syrup by continuously stirring.
11.Ensure to mix until it reaches a crumbling texture.
12.Serve it hot .
The same can be done with white rice flour too.
I used home made red rice flour.You can use store bought ones too.
Ensure that the rice flour has no lumps before adding to the jaggery syrup.
Cook in low to medium flame.
I used the pressure cooker without whistle to steam cook.You can use the steamer or idly pot.
If the syrup is watery cook for some more time.
Adding water is step 3 is just make it slightly crumbled and slightly wet.Don’t add more water.
If jaggery has impurities please filter it before boiling it for syrup.
