Vegetable Stew-Kerela Style Mixed Vegetable Ishtu

Vegetable Stew Recipe:

Vegetable Stew is one of my favourite accompaniments for aapam/idiyappam/idly/dosa/rice/roti. I have been waiting so long to make this at home and relish . This is one of the most common side dish for Kerela dishes and I have enjoyed them a lot when we at Cochin.

Vegetable Stew Recipe:


  • Diced Vegetables-1 cup
  • Onion-1 medium(sliced)
  • Ginger-1 small piece
  • Curry Leaves-Handfew
  • Coriander Leaves-To Garnish
  • Coconut Oil-To cook
  • Mustard Seeds-1/4 tsp
  • Urad Dhal-1/4 tsp
  • Salt-To taste
  • Coconut Milk-1/2 cup(First Milk)
  • Coconut Milk-1/4 cup(Second Milk)

To grind into a paste:

  • Cashews-6
  • Green Chilly-2
  • Cardamom-2
  • Roasted Bengal Gram-1/2 tsp
  • Poppy Seeds-1/2 tsp

1.Measure the ingredients and keep them ready.

2.In an idly pot or steamer ,steam cook the vegetables.

3.In a mixer ,make a smooth paste of the items mentioned under “to grind into a smooth paste”

4.In a pan,add some oil and temper with mustard seeds,urad dhal,curry leaves and add onions.

5.Saute till they turn translucent and add the steam veggies

6.Give a quick stir.

7.Add the ground paste and salt.

8.Cook for two minutes and add the second milk.Blend well and cook in low flame for five minutes.

9.Finally add the first milk and mix well.

10.Switch off and transfer to a serving bowl.

11.Drizzle some hot coconut oil or do tempering at the end.

12.Serve the vegetable stew warm with aapam/idiyappam/idly.


My Observations:

You can add veggies of you choice.

Don’t boil it after adding first milk.

Vegetable can be offered to babies above one year.

Skip salt for babies below one year.
