  • Ottadaiyan Rice-4 cups
  • Black urad dhal-1 cup
  • Salt-To taste
  • Water

1.Wash and soak rice and dhal separately overnight or 6-8 hours.

2.Drain the excess water from dhal and grind it in a grinder. Don’t remove the skin of the dhal.

3.Grind till it becomes soft and fluffy. You might have to add a half a cup of water.

4.Take it and set aside in a vessel.

5.Drain excess water from rice and grind it in the grinder.

6.Grind by adding water then and there and collect it add with the urad dhal batter when the rice is ground completely into a smooth batter.

7.Mix both by adding salt.

8.Allow it to ferment. This might take 4-6 hours.

  1. When it is fermented, mix the batter well and scoop with a ladle and fill the idly pot cavities.

  1. Steam cook for 10 minutes.

  1. Serve them with the chutney of your choice.

These indigenous rice varieties don’t need fertilizers or chemicals to grow. So you have to store carefully to avoid any bugs. You can buy two or three varieties every month in minimal quantity and try. Prefer using red chillies and vasambu or bay leaves inside open packets. If you buy in large quantities please freeze them and used dried neem leaves in the container.
