Coconut Poha Recipe:

Aval or Poha or Flattened Rice is one anytime good to go ingredient in my kitchen. This coconut poha recipe is so special because my dad loved it. All that you need is maximum of 10 minutes to do this. You can have it for your dinner or breakfast or pack in the snack box too.

Ingredients:

  • Aval-1 cup
  • Coconut-1/2 cup Grated
  • Ghee-1/2 tbsp
  • Red Chilly-1
  • Cashews- Handful
  • Mustard Seeds-1/4 tsp
  • Urad Dhal-1/4 tsp
Procedure:

1.Remove the dirt from the flakes, if any.

2.In a pan add ghee and heat.

3.Now drop the mustard seeds, urad dhal, red chilly and curry leaves.

4.When they splutter add the cashews, coconut and give a toss till the coconut is fried well

5.In the meantime wash the aval/poha under running water for a minute in a colander

6.Drain the water completely and add to the pan .

7.Sprinkle salt and gently mix.

8.Switch off the stove .

9.Garnish with coriander leaves and coconut poha is ready to be relished

Note:

You can skip the salt and offer this to babies above six months.

If you use thick variety soak for some time in hot water.

Ensure not to turn the poha mushy.
