Either the blog had some issues or my life had some problems, I couldn’t give my time to blogging. There came a small realisation. If I keep waiting for everything to settle and then resume, it might even take forever for me.

Saffron Pulao

Saffron Pulao or Zafrani Pulao Recipe

Ingredients:

Serves 2

  • Basmati rice – 1 cup
  • Milk or Coconut milk -1.5 cups
  • Saffron- 15 strands
  • Onion-1 big (thin sliced)
  • Cardamom-1
  • Cinnamon-A small stick
  • Star Anise – 1
  • Cashews-8
  • Ghee – To cook
  • Salt- To taste
  • Turmeric Powder- A pinch
  • Green Chilly- 1
  • Bay Leaf – 1

 

Procedure:

1. Wash and soak basmati rice for 20 minutes.

2. In a tbsp of coconut milk (warm it by keeping it in warm water) add a few strands of saffron and let them get soaked.

3. Take a pressure cooker and add 1/2 tbsp ghee. Saute the sliced onions, cashews and green chilly.

4. Set them aside. Add 1 tbsp of ghee to the same pan.

5. Add the spices and let them splutter.

6. Add the drained rice, coconut milk, 1 tbsp soaked milk with saffron and the remaining saffron strands. Give a gentle toss.

7. Cook for one whistle and wait till the pressure gets released.

8. Now add the fried onions and cashews. Garnish and serve.

9. Aromatic Saffron Pulao is ready.

 

Notes:

You can open cook on a pressure pan if you use milk

Pressure cooking for 1 whistle is perfect for coconut milk.

Let the coconut milk be neither thick nor too diluted.
