Whole Wheat Fudge Brownie Recipe

My dear KitchenKathukutty family! Here is me meeting you with the 600 th post after a huge gap of 3 months. Presenting to you “Eggless Whole Wheat Fudge Brownie Recipe” as the 600 th post. This is a moment which I have been waiting for. Resuming healthy food blogging always stayed on my to-do- list and today I check it. Little one wished to bake a brownie together since the time we sourced pure cocoa powder from here

Whole Wheat Fudge Brownie Recipe:

Making brownies have become very easy for little one after I baked Amarnath Brownies with him and he loves every part of it even till clicking.

Ingredients:

  • Flour – 120 grams
  • Butter-120 grams
  • Flaxseed gel – 9 tbsp (Refer notes for preparation)
  • Curd – 2 tsp
  • Jaggery-300 gms (I have used naatu sakkarai)
  • Cocoa Powder -200 grams or( Cocoa Powder- 70 gms+150 gms cocoa chips or dark chocolate)
  • Baking powder-1/2 tsp

I have used choco chips & cocoa powder. But I would recommend using cocoa powder fully)

How to make flaxseed gel?

1 tbsp of dry roasted flaxseed powder mixed with 3 tbsp of warm water.

For this measurement use 3 tbsp of flaxseed powder + 9 tbsp of warm water.

This is an egg replacer. If you use eggs, use 3 eggs and skip curd, flaxseed gel and baking powder.

Preparation Time: 10 minutes

Baking Time-25-35 minutes

Temperature: 160 degrees C

Mode: Lower Rod On

Makes 9 brownies of the size shown below

Procedure:

1. Measure and keep all the ingredients ready.

2. In a pan heat the butter and melt it.

 

3. When the melted butter is still hot add the choco chips and jaggery to mix them well. The choco chips will also melt in the warmth

4. Use a hand whisk to mix them together . Just cut and fold.

 

5. Sieve together the cocoa powder and whole wheat flour to 5 times

 

6. Finally add baking powder and sift once. The dry ingredients are ready.

 

7. When the butter +jaggery + choco chips are at room temperature, slowly add the flax seed gel + curd and blend.

8. The wet ingredients are ready now. Preheat the oven to 170 degrees C for 10 minutes.

 

9. Grease the pan with butter and dust with flour. Mix the wet and dry ingredients. Blend them well with a hand whisk.

10. Now pour into the greased pan and tap to remove air bubbles.

11. Bake at 160 degrees C for 25-30 minutes. Stop baking at 25 minutes and check for the toothpick test. If needed bake for 5 to 7 more minutes.

12. When the brownie passes the toothpick test carefully take it out from the OTG and wrap a wet towel around it. Scrap the edges when it is cooled.

13. . Invert on a plate and slice them after the brownie is completely cooled.

14. The brownie fudge is ready for you now.


Alternatives:

Can I make it gluten-free?

Yes. You can use Amaranath flour or any millet flour + almond flour combination.

Can I make it vegan?

Use any seed oil instead of butter.

What is the replacement for wheat flour?

Millet flour + Almond flour or Amaranth flour

Difference between Fudge brownie & Brownie:

Notes:

Do not try to invert the brownie before it cools down.

Adding butter paper is not required if you grease well.

Cut into pieces only after the brownie is cooled.

The brownie is not crumbly in nature.

Please read through your oven manual before proceeding.

Dip the knife in hot water to slice the cake perfectly.

Sieving the dry ingredients is a major step that prevents disasters.

You can also top it with any nuts of your choice.

It stays good for 3 days at room temperature and 5 days in the refrigerator

Be generous in using butter to grease the pan.

This can be offered to babies above one year.
