Today’s recipe is a very simple but a nutritious power packed side dish for rice. Is is methi dal/methi dal fry/vendhya keerai paruppu kootu. A bowl of hot steaming rice rice, few spoons of ghee and methi dhal fry makes a heavenly combo.Methi Leaves or Fenugreek leaves or Uluva or Vendhya Keerai is an excellent source of iron and moong dhal is an excellent source of protein. So this becomes perfect combo in terms of nutrition too.Even kids fussy about having greens will love this combination. Come let’s get into the recipe.
- Methi leaves-1 cup(Tightly packed)
- Moong dhal-1 cup(Cooked)
- Shallots-1/4 cup(Chopped)
- Red chilly-1
- Oil-To cook
- Salt-To taste
- Mustard seeds-1/4 tsp
- Urad dhal-1/4 tsp
- Curry leaves
1.Clean methi leaves and wash them well.
2.Wash and rinse dhal and pressure cook it to a mushy state.
3.In a pan,add oil.
4.When it gets hot temper with mustard seeds,urad dhal,red chilly and curry leaves.
5.Add the chopped shallots and saute till they turn soft.
6.Now add methi leaves and saute well.
7.Add a pinch of hing and turmeric powder.
8.Add half cup of water and let it cook.
9.Now add the dhal and salt.
10.Mix well and cook till it thickens.
11.Serve it hot with ghee and rice.
You can chop the leaves and also add.
Using shallots will give you an excellent taste.
