A lot of the readers wanted the perfect water ratio to cook millet like normal rice in the pressure cooker though my general recommendation would be open cooking for rice or millet. Ingredients:

  • Little millet- 1 cup
  • Water- 1 1/2 cup

This is the water ratio for pulao type non-sticky individual grainy texture. You can add a 1/4 cup for a rice-like texture.

Procedure:

1.Rinse the millet well and soak for 4 hours.

2.Drain excess water from the millet.

3.Heat a pressure cooker and add a spoon of ghee.

4.Now add the millet and add water.

5.Pressure cook for 3 whistles at high temperature.

6.When the pressure is released fluff it up and serve.

 

What is little millet or saamai?

This is one of the hardiest millets because they can sustain any adverse climatic conditions. It is called little millet because it is the tiniest among all millets. The little millet is much superior when it comes to nutrition. The smaller might be its size but the macronutrients and dietary fibre are much higher in quantity.  It is a short duration crop and can withstand drought and waterlogging.

Notes:

The cooked millet won’t be pearl white if your millet is unpolished. The millets have to be unpolished to reap the fuller benefits.

There will be a browny white colour in the grains.

The quantity yield after cooking is almost double when compared to normal rice.

This is filling too on your tummy.

You can add a clove or bay leaf to the pressure cooker for pulao or biriyani.
