Ingredients:

  • Kuruvikkar Rice- 2 cups
  • Coconut- Grated 3/4 cup
  • Jaggery – 3/4 cup Grated
  • Water-3/4 cup
  • Cardamom Powder- A pinch

Procedure:

1.Wash and rinse the rice well.

2.Soak the rice for 8 hours.

3.Now add the completely drained rice, coconut, and a pinch of salt to a mixer.

4.Give it a few pulses to make it coarse. Don’t add more than 1/4 cup water.

5.In a pan add cup of water and dissolve the jaggery.

 

6.Filter the jaggery. Add ghee, saute cashews and coconut pieces. When they are roasted  add the filtered jaggery syrup.

7.When it comes to a quick boil, slowly add the ground rice and keep stirring.

8.Keep stirring to make a thick mass (Might take 10 minutes) and it would turn non-sticky.

9.Take from Kadai , slightly cool down and make dumplings.

10.Steam cook for 10-15 minutes.

11. Kuruvikkar Sweet Kozhukkattai is ready.

 

What is Kuruvikkar Rice?

Kuruvikkar paddy is yellow in colour and rice is brown/dark red. It looks bold. The Kuruvikkar rice is suitable for everybody. It is rich in iron, magnesium and selenium
