PANIVARAGU DOSA|PROSO MILLET DOSA-Panivaragu or Proso Millet is also called hog millet(Panicum miliaceum).It is gluten-free, rich in protein, phosphorous, lecithin and calcium.It reduces the chances of diabetes, cardiac diseases and cancer.It has rich anti-ageing properties.It can treat special physical conditions like celiac and pellagra.It looks like a small white nut and can be consumed just like rice.You can sprout and use in salads.
PANIVARAGU DOSA|PROSO MILLET DOSA/IDLY RECIPE:
Ingredients:
- Panivaragu/Proso Millet-3/4 cup
- Sago/Tapioca Seeds-2 tbsp
- Raw Rice-2 tbsp
- Urad Dhal-1/4 cup
- Fenugreek-1 tsp
- Salt-To taste
1.Measure and keep all ingredients ready.
2.Wash and soak everything except salt for 4-6 hours.
3.Drain excess water and blend in a mixer to a smooth batter.
4.Mix salt and allow it to ferment for 8 hours.
5.After fermentation, you can make idly/dosa.
6.PANIVARAGU DOSA|PROSO MILLET DOSA/IDLY is ready.
7.Serve it warm with chutney.
My Observations:
The batter can be stored for 3 days in the refrigerator.
You can offer this for babies above six months.
Skip salt for babies below one year.
You can introduce millets to babies from 6 months to 8 months of age.
Always have a word with your doctor before offering any new food to babies.
