Vegan Butter Scotch Muffins RECIPE:

That was a huge gap after vegan chocolate pudding recipe and the reason behind is the transfer we have got and so I was busy with personal works. After a long time, I made an attempt to bake muffins and as usual, it was an experiment to make a vegan muffin in butterscotch flavour with whole wheat flour and jaggery. This vegan butterscotch muffins recipe is a super easy one.

Baking Time -20 mins

Ingredients:

  • Whole Wheat Flour-1/2 cup
  • Baking soda-1/4 tsp
  • Butterscotch Chips-Half of 1/4 cup
  • Water-1/2 cup
  • Powdered Jaggery-1/4 cup
  • Vinegar-1/4 tbsp
  • Oil-1.5 tbsp

    Vegan Butter Scotch Muffins RECIPE:

Procedure:

1. Measure and keep all the ingredients ready. Place the cupcake liners on the tray. Preheat the OTG for 10 mins to at 180 degrees C.

 

2. In a saucepan add little water(1 tbsp-2 tbsp) and dissolve the jaggery. Don’t boil. Filter and allow it to cool.

 

3.While the dissolved jaggery is cooling,quickly sift the flour+bakingsoda for 3-5 times and powder half of the butterscotch chips

4.Now add the flour+baking soda along with powdered butter scotch chips. Slowly add the dissolved jaggery,vinegar and oil.
5. Gently mix by adding water little by little. The batter for the muffin is ready. Don’t mix or blend so rigorously.

6. Scoop out and pour in the muffin tray. Dust the remaining chips with flour and add one or two to each. (Don’t add as many as I have done).

7. Bake at 180 degrees celsius in a preheated OTG for 20-25 minutes. Check for doneness around 20 minutes.

8. Let them cool down completely. Vegan Butter Scotch Muffins are ready.



P.S:

The muffins are extremely soft and they just melt in your mouth.

Don’t beat the batter much.

Please don’t boil the jaggery with water. No syrup consistency is needed.

Ensure all the ingredients are at room temperature.

 

Store the muffins in an airtight container. I believe it would stay good for 4 days at room temperature.
