The huge challenge/worry/doubt of all moms is about kid refusing cows milk .I have received a lot of queries about how can a parent can make his/her kid drink milk without any battles.My answer would prefer plain milk or instant dry fruits milk or Prefer no milk at all.Yeah..I prefer no milk at all if the kid has enough milk products on daily basis or takes other sources of calcium.I don’t force my kid to take milk.In fact, milk is only used rarely in cooking or for direct consumption at home.I stopped it way back in 2012.And none of us take coffee/tea too. Hello Friends! I hope all of you all keeping good. People in North India please take extra care of yourself because of the smoggy winter prevalent. There were no posts from me for the past two days because of the horrible pollution which has bombarded us. It was a real shock to the first timer like us and we are slowly finding ways and means to tackle it. I had severe eye irritation because of it irrespective of staying indoors. It is definitely not so simple as most people think. This is an alarming situation. I shall write a separate post on this because I would write several pages if I commence. Coming to today’s recipe, it is our own traditions and the most healthy snack “Kadalai Mittai/Peanut Bar/Groundnut Chikki/Groundnut Candy”.This is one of the recipes which I had been miserably failing several times and this time hubby made it perfectly. Yeah! You can call this a guest post from Kitchen King(H/O Kitchen Kathukutty). We have so keenly tried on this because we had a tough time to pick up a pure groundnut candy for our kid. By pure what do I mean? I mean the ingredients should be only “Jaggery+Water+Cardamom+Groundnut” and no glucose syrup or other artificial/refined sweeteners. You may ask me why so much of stress on this.It is because it is our regular snack. We don’t send packed snack/ready made food as our son’s snack. Everyone in the family is so fond of groundnuts.We love it as laddu/candy/steamed/roasted/gravy/stir fry/salad. I used to make this laddu when little one was less than two years when I was scared if he would bite groundnut candy(our own kadalai mittai) and chew well. Groundnut is an excellent source of energy,protein and selenium. When we combine groundnut and jaggery it becomes a power house of iron too. I always prefer the traditional candies like groundnut candy/laddu/fried gram ladoo/sesame laddu to any other store bought cookies or candies or biscuits. MULTIGRAIN CASHEW CARROT CAKE-Yes, you heard it right-A cake with multigrain flour/health mix/sathumaavu that too 100% eggless.I was never so thrilled and excited so far even when I had cooked first and posted my first recipe.Buying an OTG was a long pending one and I was the sole reason for dragging it. I was so sceptical about its usage and worth of the purchase.I was constantly doubting in many aspects and finally, we bought this two weeks back.It is a 24 L Morphy Richards OTG.I have been reading and learning a lot of baking basics, tips and recipes since then.Ask my friends and you would know how much I had nagged them šŸ˜‰ With some beforehand experience of making cakes in the pressure cooker and as a result of reading a lot from the web, FB groups and books I finally roughly drafted this recipe.The major reference comes from here and FB group OVENDERFULĀ  MOM BAKERS COMMUNITY.I was so sure of baking it healthy without using maida/refined flour/all purpose flour.I have tried cakes with wheat and all millet flours in the pressure cooker. Most of the young mothers are very eager in introducing dry fruits to babies and I am definitely one among them. Dry fruits/nuts have so much of goodness in them that they aid with a great variant of nutrients, help in preventing constipation, prevent aneamia, and also help in nourishing the health of the baby.I slowly introduced them as per my doctor’s advice by making them small pieces at initial stages, adding badam/cashew paste in dishes, including dry fruits milk , making energy balls or energy bars . Later on he began taking them as such as whole nuts. This is one main reason behind my blog not having the recipes of any type dry fruits powder despite several requests from many readers. My sincere apologies for the same and I will definitely do it before this month end as I have got a batch done recently. The Jingle bells season is here and I am drowned in sweet memories of Christmas Celebrations at school and with my friends. My native(Palayamkottai-Known as Oxford of South India) is also famous for the yummy mouth watering plum cakes/Christmas cakes.We would have them flooding from all our friends a week ahead and most of it will be 100% home made from scratch. DRY FRUITS BURFI OR ENERGY BARS

Diwali/Deepavali is slowly peeping every household and I can feel the glitters in the air. I am sure all of you are getting ready in all aspects like making sweets & savoury, purchase, pooja preparations. I began my preparations last week and I wanted to attempt different but easy recipes for this Diwali. I occasionally came across this recipe in a magazine and prepared myself to make it right then. I made few alterations however as per my family’s preference. This is an excellent healthy,nutritiousĀ  and power packed sweet for this festival and it can be your baby/toddler snack , school goer’s evening snack ,travel food option.
