Vegetable Pulao Recipe for Kids:

Vegetable Pulao/Pulav is a super quick and easy dish which can be yummy and colorful for kids lunchbox. There are several types of pulao which comes like a flash to my mind during morning hours and one such is this too. When I wanted to put on this post, I had a query on if it is fried rice or biriyani or pulao. Hence I went in to dig more about biriyani vs pulao. Biriyani and Pulao are two different dishes but to give the differences is pretty confusing. Biriyani is basically a dish made with pre-cooked rice and vegetables using layering technique whereas pulao is when we cook rice and vegetables together in a pot. Biriyani is time-consuming and pretty spicy when compared to pulao. These are the basic differences. The below recipe post has two attempts made on two different days. I didn’t have Basmati Rice in my pantry and hence tried with Seeraga Samba Rice during the second attempt. It was so flavourful and great that my little one wanted it more and more. But ideally, pulao is made using Basmati Rice. After reading about Biriyani Vs Pulao, I understood that we have been using it vice versa too at times. But who cares when the dish is just delicious 🙂

Ingredients:

  • Rice-1 cup
  • Vegetables-1 cup
  • Onion-1 (Sliced)
  • Mint Leaves-7
  • Coriander Leaves-Handful
  • Garam masala Powder-1 Tsp
  • Green Chilly-1
  • Water-2 cups
  • Cinnamon-A small piece
  • Cardamom-2
  • Clove-1
  • Bay Leaf-1 small
  • Ghee -To Cook
  • Salt-To taste

You can use carrot, peas,potato,baby corn.corn,tomato,cauliflower.

Procedure:

1. Measure all the ingredients and keep them ready.

2. Rinse and soak the rice for 30 minutes.

3. In a pressure cooker, add ghee and the spices.

4. Add the sliced onions, green chilly, mint leaves coriander leaves and saute them well.

5. When the raw smell vanishes add the vegetables and fry well.

6. Finally, add rice and salt. Mix well.

7. Add water and pressure cook for two whistles.

8. When the pressure is released, slowly fluff with a fork.

9. Vegetable Pulao is ready to be served with Gobi Manchurian /Raitha

P.S:

Please read the instructions on the rice pack for water levels.

You can cook the vegetables(steam) and rice separate and mix them together too.

Adjust spices according to your taste.
