The best part of salads is they are extremely versatile. You can make n number of variations every day and so you will never get bored of them. They are filling, protein-rich when made with sprouts or legumes. Time taken is also very less. Doesn’t that make it very desirable?

Chick Peas Salad Recipe

Ingredients:

  • Chick peas-1 cup
  • Tomato-1 finely chopped
  • Onion-1 medium-sized finely chopped
  • Cucumber-1/2 finely chopped
  • Raw mang0-1 tbsp (finely chopped)
  • Salt-To Taste
  • Pepper powder-1/4 tsp
  • Chilly powder-1/4 tsp
  • Coriander powder-1/4 tsp
  • Mint & coriander leaves to garnish

Procedure:

1. Soak the chickpea overnight after rinsing it well.

2. The next day morning or after 8 hours, pressure cook for 3 whistles.

3. Drain excess water if any after the pressure is released.

4. In a bowl, add chopped onion and the spice powders, salt.

5. Then add chopped tomatoes, capsicum, cucumber, raw mangoes.

6. Give a quick mix and garnish with coriander leaves and mint leaves.

Is soaking overnight essential?

Legumes or grains need soaking for a specific time to avoid the ill effects of anti-nutrients. Hence soaking to a minimum of 6 hours is essential.

Can I include raw & soaked chickpeas instead of pressure cooked chickpeas?

Use sprouted chickpeas if you prefer not to pressure cook.

What can I replace chickpeas with?

Any sprouts or any cooked legume or millet.

P.S:

You can add olive oil to the dressing.

Including coloured capsicum adds more colours and flavours.
