Tomato Thokku Recipe :
Tomato Thokku or Thakkali Thokku is such a quick fix and an all-rounder accompaniment for almost all dishes ranging from simple curd rice to roti. I have already posted a version of tomato thokku with onion which goes well with roti and it is so great for travel.It stays perfect for three days at room temperature too.When refrigerated and handled right this can stay good for three months without preservatives.This recipe of Tomato Thokku is without onions and very easy to make.My step by step images turned out to be a flop, hence I am not adding them today. I shall include them when I make next time.

The huge challenge/worry/doubt of all moms is about kid refusing cows milk .I have received a lot of queries about how can a parent can make his/her kid drink milk without any battles.My answer would prefer plain milk or instant dry fruits milk or Prefer no milk at all.Yeah..I prefer no milk at all if the kid has enough milk products on daily basis or takes other sources of calcium.I don’t force my kid to take milk.In fact, milk is only used rarely in cooking or for direct consumption at home.I stopped it way back in 2012.And none of us take coffee/tea too. But we consume all milk products like butter,ghee, cheese, paneer,curd regularly.This kesar almond mix is one of the oldest preparations at home.I made this for little one as I kept forgetting soaking almonds every night for daily consumption.I have finally come with a post on details to avoid a gooey mix when prepared at home.And you know what this is sugarless.So it is safe to use even for 6 months baby.The below procedure might seem complex but I can ensure a 100% non sticky powder which will just mix with warm milk.This will stay good even for a year if you freeze it. Yeppieee!!!I finally tried baking a cookies for the first time and it ended up so successfully.And you know what makes it even wonderful ?It is white sugar free/gluten free/raising agents free -Sounds extremely nutritious right?It is made of finger millet+Amaranth flour as main ingredients.This is my first attempt in baking cookies/biscuits at home and it turned out super yummy and a great hit.It is toddler approved and in less than 24 hours more a tray is empty.My little one loved it so much.I was really thinking of various options and recipes to use this flour.I tried adding to dosa/fritters batter.It came out well.But it took me around 2 months to try a baked goodie recipe.I didn’t have enough confidence to give it a try because baking a cookie/baking without raising agents/baking with rajgira flour etc etc and a lot more was new to me.I am so happy that my maiden attempt turned out super healthy and yummy.Before getting into the recipe let’s look upon some facts about amaranth /rajgira. Jam Jam Jammy—Remember these ad guys?Every time when a jam is made at home I remember this tune and song.I even get amazed at myself when I think of having had a great craze for jam/any sweet when I was in school.And think of the change in me now?I have cut down all refined sugars in my cooking and have been used to even skipping sugars totally. Are you wondering why is this mentioned now? It is just to give you all a confidence that any change for a goodness is possible.There was a time when a few kgs of sugar was bought exclusively for me in my home and now I am into strict “no white ingredients” in my cooking mode. Hello Friends!I hope all of you all keeping good .People in North India please take extra care of yourself because of the smoggy winter prevalent.There were no posts from me for the past two days because of the horrible pollution which has bombarded us. It was a real shock to a first timer like us and we are slowly finding ways and means to tackle it.I had severe eye irritation because of it irrespective of staying indoors.It is definitely not so simple as most people think.This is an alarming situation.I shall write a separate post on this because I would write several pages if I commence.Coming to today’s recipe,it is our own traditional and the most healthy snack “Kadalai Mittai/Peanut Bar/Groundnut Chikki/Groundnut Candy”.This is one of the recipes which I had been miserably failing several times and this time hubby made it perfectly.Yeah!You can call this a guest post from Kitchen King(H/O Kitchen Kathukutty).We have so keenly trying on this because we had a tough time to pick up a pure groundnut candy for our kid.By pure what do I mean?I mean the ingredients should be only “Jaggery+Water+Cardamom+Groundnut” and no glucose syrup or other artificial/refined sweeteners. You may ask me why so much of stress on this .It is because it is our regular snack.We don’t send packed snack/ready made food as our son’s snack. Peanuts/Groundnuts are so rich in protein and combining it with jaggery makes it a super food.
