Hello everybody!Happy International Labour Day! How are you doing? It has been two weeks since I had posted. We were on a short trip to native for our family function and just got settled. Today’s palakottai kuzhambu recipe is a new trial in my kitchen. We had jackfruit from the South Indian Stores here and the seeds were lying & tadaa this recipe

Ingredients:

  • Jack fruit Seeds-8
  • Shallots-8
  • Oil-to cook
  • Coriander leaves –To garnish
  • Thick tamarind extract-1/2 cup

To sauté & grind:

  • Coriander Seeds-1/2 tsp
  • Red Chillies-2
  • Coconut-1 tbsp(grated)
  • Gram Dhal-1/2 tsp
  • Salt-To taste
  • Tomato-1 small

To temper:

  • Mustard Seeds-1/4 tsp
  • Urad Dhal-1/4 tsp
  • Curry Leaves –Handful

Procedure:

1.Measure all the ingredients and keep them ready.

2.Peel the white skin of the jack fruit seeds.

3.Pressure cook them for 3 whistles.Set them aside.palakottai kuzhambu recipe

4.In a pan,add oil.

5. Add the items mentioned under “to sauté & grind” and fry them till they turn soft.

6.Cool them and grind into a smooth paste

7. Now add oil to the same pan, temper and sauté shallots and jack fruit seeds.

8. Add tamarind extract and cook.

9.Now add the ground paste and allow them to boil for 5 minutes.

10.Add salt & simmer.

11.The palakottai kuzhambu is ready to be relished with smoking hot rice or rotis or dosa/idly.

P.S:

Certain seeds turn out to be hard even after pressure cooking for 3 whistles.In such cases cook for 2 more whistles.

You can chop the seeds into two and then add to the curry.

I have added salt to the paste.

You can also add ginger,garlic and fennel seeds to the paste for a different taste.

Adjust spices according to your taste.

This can be offered to babies above 6 months without salt.

Always have a word with your paediatrician before trying new foods for babies.

Rule out the family history of allergies before trying new ingredients.
