Curd Kodubale or Mosaru Kodubale is a savoury snack from the state of Karnataka.I had made this for Kirshna Jeyanthi and hence thought of sharing with you all. INSTANT FIGS & DRY FRUITS LADOO:

Most of the young mothers are very eager in introducing dry fruits to babies and I am definitely one among them. Dry fruits/nuts have so much of goodness in them that they aid with a great variant of nutrients, help in preventing constipation, prevent aneamia, and also help in nourishing the health of the baby.I slowly introduced them as per my doctor’s advice by making them small pieces at initial stages, adding badam/cashew paste in dishes, including dry fruits milk , making energy balls or energy bars . Later on he began taking them as such as whole nuts. This is one main reason behind my blog not having the recipes of any type dry fruits powder despite several requests from many readers. My sincere apologies for the same and I will definitely do it before this month end as I have got a batch done recently. INSTANT WHEAT FINGER MILLET DOSA|INSTANT AATA RAGI DOSA

Vanakkam… Namaste..Hello… How are you all? Did you miss my posts guys? Here I come with a super quick and extremely nutritious recipe that needs just 20 minutes and two ingredients.You can serve this for all age group of family members from six months to any age group.You can make any variations with this recipe. Any millet flour(jowar or bajra or sorghum or any) can be used instead of ragi/finger millet flour and any rice flour can be used instead of wheat flour. CAABAGE PARATHA

Cabbage is one vegetable which I prefer to have only in certain forms.I prefer it as stir fry or vada or paratha only. Very rarely I am ok to have it in my sandwich with mayo.This cabbage paratha came to my mind as I had a very little quantity of it which wouldn’t be enough for any other dishes.I just made it slightly different from the other two paratha recipes posted already(Check turnip paratha recipe here and cheese paratha recipe here.Come let us have a quick look at this simple recipe.

VEGETABLE BREAD UPMA|VEGETABLES BREAD STIR FRY

Whole wheat bread has always been a quick ingredient in my cooking and I prefer to load it with veggies/cheese/butter to make it healthy.Sandwiches make a quick and healthy snack/breakfast for the family when we really need a change. This bread upma flashed in my mind when mothers wanted healthy lunch box recipes/snacks recipes and finger foods. Whole wheat bread /Brown bread with no added sugar can be given to babies above 10 months very occasionally. For toddlers this can be a healthy snack/breakfast/dinner or tiffin box menu. I have ensured to include twice the amount of veggies than bread to make sure it is more nutritious. The combination of veggies added/size/shape/ratio is purely your choice.

 

Ingredients:Vegetable bread upma

  • Bread slices-12
  • Carrot-2(medium sized)
  • Potato-2(Medium Sized)
  • Beans-1 cup(Sliced)
  • Green Chilly-1
  • Tomato-1
  • Onion-1 cup(Sliced)
  • Sambhar powder-1/2 tsp
  • Chilly powder-1/2 tsp
  • Jeera Powder-1/2 tsp
  • Turmeric powder-1 tsp
  • Pepper-1/2 tsp
  • Salt-To taste
  • Oil/Ghee-To cook
  • Crumbled paneer-1 tbsp

To temper:

  • Mustard seeds-1/4 tsp
  • Urad dhal-1/4 tsp
  • Curry leaves
  • Cumin seeds-1/4 tsp

Procedure:

1.Chop the bread slices into small cubes.

2.Wash the veggies and cut into thin slices.

3.In a pan add 1 tbsp of ghee or oil and finely toast the bread cubes and add paneer crumbs at the end.

4.Set them aside. Just toss them.

5.In the same pan,add ghee or oil and temper with tempering elements and green chilly.

6.Add onion,tomatoes and all veggies one after the other and saute them well.

7.Add all masalas and give a quick stir.

8.Add a cup of water and let it cook.

9.Close the pan and let it cook.

10.When the veggies are cooked 90% add salt and quickly stir well.

11.Add the bread cubes when the veggies becomes non sticky and completely dry/cooked.

12.Toss well and serve hot.

P.S:

You can even add pre cooked peas,corn ,capsicum.

Adding a drop of lemon juice or tomato sauce enhances the taste.

Always have a word with your doctor before offering anything new.

Do consider family history of allergies.

Adjust the spices level as per your taste.

Avoid salt before 1 year for babies.

Kozhukattai|Sweet & Spicy Plain Rice Momos|Steamed Rice Balls

Kozhukattai is one of the traditional recipes like aapam, idiyappam(recipes which I had posted already) from my family and it can be your breakfast/dinner or snacks. I wanted to post this today on account of Ganesh Chaturthi. An excellent finger food for your babies. Since these are steamed and doesn’t contain much oil, spices these can be ideal for 8 months to 80 years. HAPPY VINAYAGAR CHATHURTHI  everybody đŸ™‚

Ingredients for Kozhukattai:

  • Idly/Dosa Rice-1 cup
  • Coconut-1/2 cup(grated)
  • Salt-To taste
  • Oil-To cook

For spicy version:

  • Mustard seeds -1/4 tsp
  • Urad dhal-1/4 tsp
  • Pepper powder-1/2 tsp
  • Curry leaves

For sweet version:

  • Powdered palm sugar-As per taste
  • Coconut-3 tbsp(grated)
  • Ghee-1 tsp

Procedure:

1.Wash and soak rice for 3 hours.

2.Grind rice and coconut into a smooth paste.

3.Add water to reach a flowing consistency(not watery).

4.Add some oil in a thick bottomed pan and add the batter made.

5.Keep stirring until it becomes a thick mass.

6.Grease your palms with oil and roll the cooked batter into small balls when it slightly warm.

7.Steam cook them in a idly pot or pressure cooker(without whistle).

8.For spicy version,temper a pan with oil,urad dhal,mustard seeds and curry leaves.

9.Add half of the kozhukattai and add pepper powder.

10.Quickly toss and transfer to a serving bowl.

11.For sweet version,add ghee,palm sugar and coconut.

12.Give a quick stir and serve the Kozhukattai luke warm.


P.S:

Stir the batter in medium flame.

The size depends on your choice. I prefer them small as little ones will be attracted.

The smaller the size the lesser is the timing of cooking.

Adding coconut and grinding rice makes these extremely soft. They just melt in your mouth.

The batter should be very smooth with no coarse particles.

Skip salt for babies below one year. Always have a word with your doctor before introducing any new food to your baby.

Use sterlized bowls and spoons for baby foods.

Be careful of choking if you are offering these are finger foods.

Adjust sweetness and pepper as per your taste.

WATER MELON SALAD

Water melon is my life saver in summer. Since 3/4 th of the year the season is more likely to be summer in my place I prefer watery vegetables and fruits more. This idea of a fruit salad arose in me when few mothers wanted recipes of fruits for kids who dislike fruits because of the inherent sweetness of fruits. I tasted fruits spicy salad in a buffet at The Taj.  I prefer sprouts salad for evening snacks than any other variety for the family. So I combined idea of salad with fruits. A delicious finger food for your baby,quick evening snack for your family and fussy toddler , an easy recipe of salad for a family gathering is here for you.

Ingredients: (Serves 2)

  • Water melon-1/2 cup(Chopped)
  • Tomato-1 small(chopped)
  • Onion-1 small(chopped)
  • Mint leaves-5
  • Lemon Juice-1 tsp
  • Pepper powder-1/4 tsp
  • Chat Masala-1/4 tsp(Optional)
  • Salt-To taste.

WATER MELON SALAD

Procedure:

1.Mix all ingredients except lemon juice and stir well.2.Garnish with mint leaves and serve.

P.S:The ratio of the ingredients is your choice.Do not add salt for babies below 1 year.I didn’t add chat masala.Adjust spices according to your taste.Always have a word with your doctor before introducing new foods.


WATER MELON FOR BABIES:You can offer water melon to your babies after 6 months. Prefer to puree initially(recipe will be posted soon) and move on to this later. Few suggest to introduce melons around 8 months. Please don’t prefer juices for babies. To know why,please read here. Melons don’t contribute to allergies usually. How ever have a word with your pediatrician. many prefer juice for babies as this is a watery fruit. But preferring some pieces as finger foods or mashed pieces is highly recommended. I prefer water melons for babies because it is easy to pick and soft to eat. Remove the seeds carefully and then chop. Seeds might lead to choking in babies. This fruit will be a soothing option when babies are teething.

HOW TO CHOOSE WATER MELON?

    A melon which gives a good thump and hollow sound should be chosen.Always prefer fresh un-cut fruit.Inspect for bruises or cuts in the fruit.A fully grown melon will be heavier when compared to its size.

HEALTH BENEFITS OF WATER MELON:

    The melon is 93% watery in content. It helps in hydration of your body.It is rich in Vitamin C and hence helps you in iron absorption,maintaining blood counts and boosting immunity.It is a source of Vitamin A which helps in your eye and skin health.Watermelon has calcium and manganese which helps in bone development and proper functioning of the nervous system.Water melon is known for the anti oxidant named lycophene which helps in preventing cancer,asthma and heart diseases.
