Hello readers, How are you doing? There was a short gap in my blogging owing to few health reasons and certain technical issues in running the site.I have been trying to get back to normalcy but somehow it just got postponed.It is scorching hot everywhere and Delhi touched 114 F last week. My best half was craving for the traditional Ragi Kali which is the most common food in South India and this Ragi Kali Recipe is a natural coolant. I haven’t so far tried this version of Ragi Kali. I took help of my in-laws over video call and made this. We have tasted koozh made of pearl millet and I love them so crazy. This Ragi Kali and Koozh have become my most favourite dishes now.I am even able to take it all three times a day. Trust me it is drool-worthy. Eggless Ragi Choco Chip Cake |Eggless Finger Millet Cake

Eggless Ragi Choco Chip Cake Recipe-Here comes one more random attempt with millet flour in baking without raising agents. I wanted to check the result of not using baking powder/soda in baking. My cookies were 100% successful. This cake got slightly dunked in. And I believe it is because of not using raising agents or curd. I am looking for experts to share their opinion on this. Here is the story of this bake 🙂 I ended up burning the top of my cupcakes but successfully made this cake with my little ones help. My boy is so keen about what mommy cooks for him for every meal. He urges me to plan my every meal, every snack of the week well ahead. He has his own choices and he would love to assist me in cooking especially baking. This was planned to be eggless choco chip cupcakes with ragi and flax seeds without raising agents. I accidentally altered the mode and extended the timing with no proper knowledge and burnt the top of cupcakes. So I poured the second part of the batter to a cake pan,LO did the mixing, garnishing and converted it to tutti fruity cake 🙂 He removed the burnt top of the cupcakes and stored them for this snack box for the coming week. How much should we learn from these kiddos?! I even forgot the exact measurements as this was made long back. I have given the procedure and other details for both cake and cup cake here.

Finger Millet Amaranth|Ragi Rajgira Cookies For Kids-Without Raising agents

Yeppieee!!!I finally tried baking cookies for the first time and it ended up so successfully. And you know what makes it even wonderful?It is white sugar-free/gluten free/raising agents free -Sounds extremely nutritious right? It is made of finger millet+Amaranth flour as main ingredients. This is my first attempt at baking cookies/biscuits at home and it turned out super yummy and a great hit. It is toddler approved and in less than 24 hours more a tray is empty. My little one loved it so much. I was really thinking of various options and recipes to use this flour. I tried adding to dosa/fritters batter. It came out well. But it took me around 2 months to try a baked goodie recipe. I didn’t have enough confidence to give it a try because baking a cookie/baking without raising agents/baking with rajgira flour etc and a lot more was new to me. Today’s recipe is based on our super millet “Kelvaragu/Nachini/Finger Millet/Ragi and it is a spicy kozhukkattai.It is a healthy dish for snack box or dinner. EGGLESS RAGI COOKIES-A NO SUGAR RECIPE

This is a guest post from Mrs.Archana Karthick who has already written a guest post in mushroom category.She is an awesome cook who concentrates on healthy cooking and comes out with excellent ideas especially for toddlers.Thank you dear for such a lovely add on to my blog.This is yet another healthy baking recipe with no sugar and no maida after my whole grain cake recipe.

Ingredients:

  • Ragi Flour-1 cup
  • Palm Sugar-1/2 cup
  • Butter-1/2 to 3/4 cup
  • Vanilla essence or cardamom powder-1/4 tsp
  • Cashews-10-15
  • Milk-<50 ml(Optional)

Procedure:

1.Get all the ingredients ready and pre heat oven for 180 degrees for 10 minutes.

2.Dry roast the ragi flour in medium flame until aroma arises.

3.Cool the roasted flour.

4.In a mixing bowl,add the ragi flour ,palm sugar(powdered and sieved),butter,cashews and vanilla essence.

5.Mix them well to form a dough in the consistency shown in below pic.You can add few drops of milk if you are not attaining the required consistency.

6.Grease a tray with butter and set it aside.

7.Take small portions of the dough and flatten on your palms to cookie shape and flatten it using a roller pin and cut using cookie moulds.

8.Place on the tray and allow to bake in oven for 18 to 20 minutes at 180 degrees.

9.Check for completeness using a tooth pick.

10.Remove the cookies from the tray and cool them.

11.Store it in an airtight container.

P.S:

If you don’t get the dough consistency use milk.

This stays good for 5 days if milk in not added.

Keep a check after 15 minutes.

Do not over bake as they might turn hard or get burnt.

If you make a thin cookie the timing might even reduce.
